Chili is something I've made for years, & this one looks wonderful. Adding more than one meat is an excellent idea, imho. I used to make a meaty, 5 bean chili, but now it's a super meaty, 5 meat chili~ since we grew accustomed to the various texture & color contrast in our chili over time. I use steak, ground beef, bacon, pork loin & *chicken thigh. The base simmers all day, with each protein added strategically, based on cook time for each & desired outcome. Interesting that the different meats take on similar flavor, since they get cooked with all the same seasonings for a few hours. It really is the texture contrast you mention that we're looking for. *The chicken I dice a bit smaller, & it rather mimics the texture of beans, as it turnes out. We were'nt looking for such, necessarily, but enjoy it. Thanks for sharing yours, & for the egg yolk thickener~ I'd forgotten about that. Wonderful tip.The Whitson's in AZ

Thanks for watching. Love your ideas. I tried the small cubed ham method to mimic beans. Didn't care for it because the ham taste came through and just didn't belong in the chili.

One thing you might try to get more of the cream cheese inside is form the cream cheese into a little log and freeze it. Then put half of your raw meatloaf mix into the pan, place the frozen cream cheese log in the middle and put the rest of your meat in. Then cook as you normally would. The frozen cream cheese should melt and get hot without running out as the meat cooks.

@thecarnivorecurmudgeon
@thecarnivorecurmudgeon 2 ай бұрын
@demonocusmetalocus3558 Absolutely. You can just leave them out. They lend a little texture, no real taste and they don't really hold moisture like traditional breadcrumb recipes. I would (and have) skip them.
