My mom use to just crush up the bone in salmon from a can . Salt n pepper, one egg and some flour and fry them up. Nothing wrong with the bone. More nutrients.

As for oopsies and uneven bits on your pie? That just proves it wasn't store-bought and was made by hand with love. I can imagine how wonderful your kitchen must've smelled! I just made some white bean soup for the first time. It’s simmering now. I had two round ham steaks that I diced up. I put the fatty piece and the bone in as whole large chunks to add flavor and I’ll take them out after. I diced the rest of the meat small. Added s&P a tiny one inch sprig of rosemary a sprinkling of thyme two small bay leaves a large clove of garlic one onion four small carrots and a few stalks of celery all food processed into tiny diced size. Some garlic powder and it tastes really good just from sampling the broth. Thank you for your guidance.

I’m 86 yrs old. Never have deboned my canned salmon. The bones are very soft and add flavor.

I don't like sticky on my digits, so, in order to prevent this, I wear LaTeX gloves...works great.

Leave the bones in. I am in my 80’s and I have ate salmon right out of the can with the bones on crackers. I never removed the bones I also use the juice when making patties. No onions. No crackers. No salt and pepper. Sorry but you over worked them plus it is to dry. I have been making salmon patties since I was in my teens. I do not make mind into patties. I use a spoon and drop them in the hot grease to fry them. Everyone loves them.
