There are two main schools of Buddhism, Mahayana and Theravada. China, Japan, Tibet, Vietnam are Mahayana. Thailand, Burma, Laos, Cambodia, Sri Lanka are Theravada. Spit-based booze is something the native peoples in Brazil did a lot, most famously the Tupinambá people, who used a cassava and spit based beer called Cauim in ceremonies where they would eat captured enemies. Obviously, they don't eat people anymore, but I imagine its not impossible to get some Cauim nowadays
