Can I have your recipe for chicken stock?
@theagakcook
@theagakcook 2 күн бұрын
@isabellachew2762 hello. I boil 3.5L of water and add 6pcs of chicken bones to it, bring it back to the boil, skim off scum and fats, then simmer over low heat for 30min before transferring to the thermal outer pot. If you are not using thermal pot, then start off with more water and simmer over the stove for 2hrs. I also have a video here showing the process: kzbin.info/www/bejne/h6HNf6uAf8uUg9Usi=0EE2-BHBcc4FnAWN

Thank you for the videos; I always enjoy them. But, please, please, leave the captions on for just a couple of seconds longer. There is time to watch or read, not both--and I am one of the fastest readers I have EVER encountered. This video, I had to actually slow down the feed to .75. I usually watch most videos, even with captioning, which I read because I am slightly hearing impaired, I usually SPEED up the video to 1.25! The white captioning in a nice large size is great! Your food looks soooo good. Being able to watch and read is important to me because I am unfamiliar with Singapore and knowing how normal people live their lives and care for their families is very interesting. Thank you again for taking the time to video.

Hello! Thank you! I usually buy my BBQ pork jerky during CNY when it's available everywhere. During off peak, you would need to get from the shops selling bak kwa. In recent years, I'm using this brand called Peng Guan. Here's their online shop: pengguan.com.sg/shop-online/

Thank you for the video. I always enjoy them and usually learn something new. They are very nicely done. I make and can a LOT of broth, and wonder why you do not just leave on the skin, and why you trim off the chicken toenails. When I make broth, I use all of the fatty skin and fat I can find. When the broth is finished cooking, I strain it, let the broth cool overnight in the fridge, and take off the congealed fat; it has a lot of flavor and is very easy to remove. It is also a great fat to cook with. I do not know about chicken feet, so wonder why you cut off the tips of the toes--I would think they also have a lot of flavor.
@theagakcook
@theagakcook 3 ай бұрын
Hello! I guess it's a matter of personal preference, either remove it before or after cooking 😊 I don't usually cook with animal fat, so I prefer to remove it earlier on, so that I've lesser to remove later on. As for chicken feet, I guess it's an Asian culture to remove the tips, because that's what my mum taught me to do 😆 maybe it's perceived as dirty? 🤷🏻‍♀️

Should trim off the excess leaves to make it looks neat
@theagakcook
@theagakcook 3 ай бұрын
Hello. Yes, we do the trimming after the dumplings are cooked and cool enough to handle, because my mum says the dumplings will expand after cooking, if we cut the leaves too short before cooking, it might slip open after cooking. Plus the ends of the leaves are purposely left there to prevent the smooth ends of the leaves from slipping under the string and opening up while cooking

Hi, my mozzarella always got mold after sometime in refrigerator. Do you mind to share how you keep your mozzarella cheese .
@theagakcook
@theagakcook 4 ай бұрын
I usually buy shredded cheese in bulk (because it's much cheaper), then I'll pack into bags of around 500g, vacuum seal the extra bags and freeze them. The bag that is currently being used will be kept in the chiller drawer where the temperature should be the most stable in the fridge. Ensure that the spoon/your hand is dry when removing cheese from the bag. These have stopped the molding problem for me. Hope it helps! I shall aim to film the process when I next buy cheese 😁

I wonder if you are aware of the current controversy about a product named APEEL applied to literally all fruits and vegs globally; it it not removed by washing. It extends shelf life significantly, and makes fruits look really appetizing. It is applied to organic and non-organic food by the packager, and no label is required. It starts out as a benign vegetable product, but picks up heavy metals in the manufacturing process; heavy metals are toxic and accumulate in the body, very dangerous especially for youngsters who eat a lot of fruit. The U.S. FDA approved it, but used info provided by the manufacturer, a company owned by Bill Gates. There is LOTS of info on line about APEEL; please google it and educate yourself, then make a decision whether to use, protest, investigate further, etc. Again, globally used, not removed by washing, heavy metals.

Thank you for the video. Also, I have recently become aware of a fruit/veg coating, used globally, that ends up with toxic heavy metals due the manufacturing prrocess. It is now on MOST fruits and vegs. Our FDA says it is okay, but did not do its own testing--info is from manufacturers! PLEASE do your own research, but google up APEEL. Toxic metals, even in small quantities, are accumulated in the body and can be deadly in the long run--think small children eating a lot of fruit! Look it up yourself.

Thank you for the video. They are always nicely done, and the food looks really yummy. I would like to pass along a tip, that you may already know, but: When vacuum sealing something to freeze, like shredded cheese, or anything else that is soft and squishy, like bread, pastries, mashed potatoes, etc., put the food into the vac seal bags, flatten them out a little, and freeze without vac sealing. Once the food is frozen, it will hold its shape and not squish down when the vac sealing is done. It also easier to stack in the freezer if the package is more or less uniform in size and thickness, which is easy to achieve if you spread it to an even size and thickness in the vac seal bag before freezing. Thanks again.

Before I started using thermal pot, I use about 4L water and simmer on the stove for 2hrs 😅 if you can't get chicken carcass bones, you can replace with chicken thigh bones, breast bone or even chicken feet, but the quantity will be slightly different

AND, boy your chicken is expensive. It is at least twice what I pay here, just north of Seattle. And I also wonder if your ABC soup veggies don't turn to mush after simmering for a whole hour, since it only takes about 10 min to actually cook the vegs. Different tastes, I guess. But curious.
@theagakcook

Hello @lindas.8036 ! Thank you for your kind words 😊 in Singapore, we can't choose what they learn at primary (like elementary in USA) school level, but these days many parents choose to send their kids for additional tuition/enrichment classes to supplement/revise what they learnt in school, out of school timing, some from as early as kindergarten age 🥺 but we haven't started our kids on any tuition classes until late last year, when my daughter was in primary 3 and was about to sit for her first school exams 😅
@theagakcook
@theagakcook 11 ай бұрын
@lindas.8036 wow is grocery so much cheaper in Seattle? 🥺 is that fresh or frozen chicken? And yes the vegetables in the soup will become mushy. But the soup will be very richly flavoured. I'm not a pro at such soups (Cantonese are, but I'm Hokkien), but my Cantonese friends taught me that such soups need to be simmered for at least 2hrs, and it's very nutritious for the body.
