It's funny , how my mind still thinks I can do ANYTHING , but at 70 years old my body over rules my mind ! Speaking of age I hope you don't get upset by all my comments. But what temp are you cooking? Adjusting, to me, is adjusting cook temp, never final temperature of the meat.

@@joeljay8471 This applies to final cook temp because water boils at lower temps at higher altitudes so the meat will finish at a lower internal temp no matter if you cook it at 225 or 300.

@@Girlscangrill that extra bit of information works well. If you originally stated that, I may have missed it. I’m at 7,400’ and use a Traeger, Blackstone griddle and DynaGlo grill. The grill and griddle I’ve got perfect led at this elevation. The Traeger is still in progress. But this adds to the education. Thank you!

I like the fact you aren’t afraid of taking a risk. We do a charity bbq competition once a year. And every year we mix it up a little. We have a 1st, 2nd, 3rd and a 6th in pork, brisket and ribs over the past 5 years. I’m making a huge change next year. Changing from an offset smoker to a direct heat cooker. Thinking a little less smoke and add some char vs bark. I get bored turning out the same ole same ole bbq every year, trying to read the minds of the judges. It maybe a big mistake, but I’m going to make it.. Good luck!

Flavor comparison Gateway direct vs Hunker indirect? I have seen statements that the 30 gallon size is the perfect size for a drum smoker, better than the 55. Not sure why. Could I get your opinion on whether there is a performance benefit with the 30 gallon size vs 55 gallon?

I don’t find any difference in flavors when cooking on gateway vs Hunsaker. The 30-gallon is good if you’re doing smaller briskets or 1-2 pork butts or flat ribs. If you want to hang ribs or do large full packet briskets or 4 butts, the 55 gallon is better. I think a turkey would be better on the 55 too so it’s not so close to the coals.
