When I had my rocket program I used super glue as clamp with carpenters wood glue, it should work for epoxy polymers also just keep a couple of small sections free of epoxy and super glue your fins you can add epoxy to them later, if you want to speed up your cure time add less B hardener, putting your rocket on a rotisserie will help the epoxy glue cure evenly and better balanced
