I do admire his dedication to make knives all from scratch even the steel itself. The knives turn out beautifully. Doesn't change the fact that they are more pieces of art than tools. The steel by the nature of its raw ingredients will never be of the highest quality and the knives require utmost attention and high maintenance to get the most out of them. Any high-quality, industrially-made knife from modern steel with give you better performance with less effort. But of course they won't have as much personality as these.

Skill of these people obviously is very professional but the whole documentary is full of misinformation. Especially in regards to steel quality rarity and functionality in comparison to modern day steel quality etc this is just fiction. Its inspired by mythical qualities added by pop culture and religious believes. Nonetheless great respect towards these people and it was interesting to watch. just take it with a grain of salt if you actually know something about smithing and metalwork.

Rare?? Steel is a compound mixture, it's not "found". Iron is found and mined. . . . Could be rare but steel is not. I'm guessing only 3 work shops use it because it's obviously not a very good steel otherwise it'd be used throughout the metal industry. I'm calling absolute bullsh*t on this "rare steel" remember steel is a mix of generally iron, carbon and other additives depending on what grade of steel is being produced. Very misleading title

It's extremely all nice and pretty, but I wouldn't prefer this steel to modern powdered steel or vacuum smelted steel. Yes, a lot of people are attracted to the aura and magic of handmade. But the better the steel is, the purer and more controlled its composition. Modern alloying agents are much better at creating structure.

I bought a cheap-ish Japanese knife, far from the quality above. I have seen how mine has been made, and while it's made in bulk at a factory, it gets the same treatment more or less with another type of steel. Japanese knives are truly amazing. My cooking has increased tenfold since I got mine. PS, use a wood cutting board. Plastic is trash.

I worked in a ship yard where they bought steel from all over the world Germany, Japan, Korean, China, ect ect. The top steel was USA Steel, Then German, then Sweden, then Russia, then Mexico, then Japan, Korean, and the worst was Chinese steel. These steel plates set out in all kinds of weather for 5 years. American made steel never did flake with some surface rust, German was the same. Then Mexico stated flaking, 🙄so did Japan,🙄🙄 Korean really did flaked, 👎and China was useless 👎👎

You skipped the important step of forging the bloom into a billet. That drives out the remaining slag and really shows the quality of the smelted steel.
