Olive Wagyu is the rarest type of beef in the world! Japanese Wagyu beef is world-famous for its unbeatable flavor and soft, tender texture, but somehow Olive Wagyu manages to take all of that to the next level!
Olive Wagyu is reared on Shodoshima (小豆島), a small island located in Japan's Setouchi Inland Sea (瀬戸内海). It was first pioneered by Masaki Ishii, when he had the idea to turn the wasteful by-product of making olive oil into feed for his Wagyu cattle.
It was also the winner of the 'highest fat content' category at the most recent Wagyu Olympics in 2017, officially making Olive Wagyu the most succulent steak in the world!

I love how the olive waste is reused so effectively, and then has a tangible effect on the beef itself.

Yes, it's really cool to see how they close the waste loop within their community. I knew a guy who owns a beer brewery and also raises cattle that would feed them the leftover grain from beer making.

The Oleic acid was an interesting point but I imagine most people wouldn't have noticed the other detail covered in that segment that probably has a huge effect, the glutamic acid. For those less familiar, glutamic acid is the same acid that is present in MSG, and is a natural source of umami flavor in many foods. For a cut of meat to have a significantly higher glutamic acid content explains the taste bud explosion they mentioned early on in the video (though even without it this beef probably would still have a taste explosion, but it helps).

Kind of incredible you're referring to it as "regular, standard Wagyu" when in reality, Wagyu is far and away above regular and standard, and this new variation is something even more special on top of that.

FYI, speaking as a person who's family owns a butcher shop, and I do professional butchering to help out with the shop. The cut of beef the man was referring to was the inside round with the butt cap removed. The butt cap is also known as picanha in central american cuisine. The inside round is generally a great cut for flash fry steaks (cut at like 5-7 mm thick), for beef stews, and for steaks no thicker than 3/4 inch. Also great for small diced beef stew for stir fry's and what not
