They never got paid in the railways. Every country abused the Chinese! In New Zealand they imposed a poll tax.Sounds like a British colonial thing to me.

This video was filmed in 2005. I remember watching a similar Chinese restaurant series on OMNI TV in Toronto at about the same time. The producer or director was named SHEK. Anybody has recollections of it?

Hakka people were not nomads. They were original Han people living in the centre part of today China and were driven out to the south of China during the 1000 years in 8 mass migrations. Every time was during dynasty changes. Once they settled in a town or a village, they didn't move for another 300 to 400 years. Not until last 100 years, some moved abroad to find better life or because of fleeing their life for their participation in overthrowing Qing dynasty, fighting for Hakka Han predominant Taipin Heaven Kingdom.

I went to Havana and searched out the only Chinese restaurant open after hurricane damage kept repairs being done elsewhere. It reminded me of an 80s Toronto Chinatown spot, flavors are familiar, but nothing stood out. It was owned & operated by a Mandarin speaking Chinese expat cook, and a local Cuban wife, a couple's business.

Paid indentured Chinese men are actors in a depressing part of Cuba history. Their controlling measures were so vicious that centuries before Communism, these workers were not allowed to leave the island, and raise families there. Their unmarked graves make modern Cubans mostly ignorant of these Chinese' existence.

My niece told me, when her grand mother in law passed away in the small city of Southern California, the entire community shut down, tens of thousands of citizens came to her funeral.

Just a quick note: When Mr. Yong talks about the sixth flavor "ma," he's referring to the sensation of "numbness," commonly associated with "ma la" in Sichuan cuisine. The term "umami" you mentioned in your book should actually be "xian" in Chinese.

You are right about xian in Chinese for umami. But Mr. Yong indicated to me the "ma" is actually umami. (I don't know why he used the word "ma" may be it's a Peruvian usage?

I m Singaporean Chinese but i have lived and studied in Trinidad. Am always happy to see videos like this coz i miss Trinidad and Tobago. And its people. I think i can relate well to this story! 😊

Germans had their colonial territorial district in Shanghai, so they hung on to it during WWII. In fact, a German expat helped take in refugees in Nanking, and saved them from the slaughter of the Nanking Massacre. Only Nazi Navy records, if any survived, would tell the tale, tbh. Don't slight the dead.

The Spanish had nothing to do with Chinese immigration to Peru. Peru declared its independence in 1821 and the first Chinese immigrants arrived in 1849.

Mr. Kwan, you have stepped into a very truncated version of the Chinese food history in Calcutta. There are the Fujianese, Cantonese as well as Hakka strands within the Chinese food culture of Calcutta. Perhaps some day you might have some time to visit the eastern USA, or even share a few thoughts over electronic media. Should love to discuss aspects of the Chinese food culture of Calcutta that have not been covered in your outstanding video, as well as the entire series. For example, I do not hear of CAUL FAT and its use in the "Chinese cuisine" of Calcutta. When I was growing up in the 60s, there was no Nelson Wang on the horizon, but other than the Tengra colony, the number of Chinese restaurants frequented by the so-called elites of that city numbered fewer than 5. And therein hangs a tale, or many tales, if you so choose. No picture of Chinese cuisine and culture in Calcutta is complete if a reasonably thorough review of these places is missing.

What an incredible story! I used to think that my mother’s life was hard enough walking from Guangzhou to Hong Kong to meet my dad after 1949. I think all Chinese had difficult lives in war torn China in that era. But, the story of this Chinese family is exceptionally intriguing, inspiring and makes me feel that I am fortunate because of my mother’s decision to walk to Hong Kong.

Thank you for this. I also have the strong habit of surveying Chinese restaurants wherever I travel, so across 20 years of visiting India (and being a resident continuously for a year), I tried a lot of Chinese food in India. And I was frustrated most of the time. The best Chinese restaurant food I ever had was when I finally stumbled on Ling's Pavilion in Mumbai. I was impressed, for example, that I could actually order a simple dish of green vegetables! The second best was at a place in Tangra, Kolkata, but in order to get the better food I had to send away the waiter and ask him to bring the owners out. I asked the owners to cook me something *they* themselves would like to eat at home. It was not fancy, but at least it felt like proper Chinese food and it was delicious. It is also lucky that pork is available in West Bengal state. Much of my time in India is in Punjab state, where both pork and beef are illegal. This, and the landlocked people's unfamiliarity with seafood and their unadventurous tastes, makes it hard to get worthwhile Chinese food in that location. "Chinese food" for Punjabis, I joke, is basically Indian food with cumin-coriander omitted, plus "noodles."
