My kids used to like 'bugs on a log' when they were young. That's a stalk of celery with peanut butter on it and raisins on top of that. I use celery in salads, soups or anything else I choose to. The leaves also make a great garnish.

Chop collards ,de-rib, add chopped onion, add smoked neck bones, add black-eyed peas, salt, pepper, soul season, Adobe with cumin, one stick of butter, stew slow over night
