Well , if you're concerned enough to admonish viewers NOT to destroy "burn" the resource by improper harvesting, then why not take a moment to demonstrate the proper way to "pinch?" the caps off of the stem; and, perhaps a brief explanation as to why the leaving a portion of stalk below ground is important. But, since you're the one doing the warning, why not make an effort to share some of that knowledge gained from all that picking experience with us. Furthermore I would never risk picking my own mushrooms, as picking the wrong ones can prove deadly, I chose to watch this video hoping to learn about mushroom picking. You appear to be very knowledgeable, but, unwilling to share much of what you know. I am perfectly capable to learn all about all that I inquired about on my own. I feel that U R a bit of a slug for NOT bothering to demonstrate how (and why) to properly harvest, nor mention a word about how to properly identify mushrooms that are safe to eat and/or avoid those that are not. Consuming mushrooms and watching your video are truly analogous; mushrooms taste good, but provide no real nutrition, your video may be neat to watch but is of no educational value. (In fact, its scientific content is flawed, as it contains mis-information.)

While I’m sure this still tastes good, a 4 hour brine is not enough time I believe for a true brine that helps shelf life. The brining process actually creates a prime environment for lactobacillus to thrive which is what you want in a brined fish. The recommended minimum is an 8-12 hour brine to allow for more production of lactobacillus which itself also creates an even more inhospitable environment for “bad germs” thus prolonging shelf life. The sugar is in fact only there to feed the lactobacillus bacteria so that it can produce lactic acid which is still the best preservative for meat on the market. (Think commercial pig products)
