Doing fine, just seeing this in mid may. Love the videos and the chance to see you and your talents on display. I've completely retired last year from 2 decades of service to the community. Now time to play in our seventies. . Off to California manana. One week and then back to the mountains in N. C. Love hearing your mellow tones inthe utube. I hope all's well with you. Bonjour. "Sorry I don't speack English but... Thank You my God"... 😉 (Je continue en français...😉). J'aime votre vidéo car c'est bien la première fois qu'un "non-français" respecte notre gastronomie Française, surtout cette recette de cuisses de grenouilles "à la provençale"... En effet, les autres ne mettent pas les tomates... Or, sans tomates... ce n'est pas un plat "à la provençale". Par contre, personnellement... je les préfère cuisinées avec du beurre (car une sauce au beurre est bien meilleure qu'à l'huile...). Mais chacun ses goûts. En tout cas merci et bonne continuation à vous. Et bonne année 2024.

@@PepeCanos Most of what I hear is loud music, and I S-T-R-A-I-N to hear what you are saying because the thing I came here for -- YOU -- is being blocked by that music. The viewer should strain to recognize the soundtrack, not strain to recognize the primary content.

heberildo... thanks for the contact... I make stock with the bones and render the fat from the rest of the skin and the wings... I freeze the stock for later because I don't use it in this recipe...

It's EASIER to open them if you steam them... BUT you loose juice and risk overcooking them...

What was the Oven temp and for how long is it in the oven for?

I set the oven at 350F. Bake until golden brown... Control the doneness of the meat by searing it more or less before the pastry goes on...

Followed all instructions except used crimini mushrooms, beef stock and no marrow. Beautiful and so delicious! I made my own pate with chicken livers instead of foie gras and it was perfect! Thank you, Pepe Cano!

I'm sorry but burning the food into charcoal?....is a big NO. Burnt food cause stomach cancer.

I understand it's burnt fats that are carcinogenic, but carbonised plant matter is not. When fats smoke it's really bad - BBQ is risky for this reason. I've learned that if you can't avoid eating burnt fats, at least have some form of Vitamin C with it.
