💫 Holiday Recipe: My Tandoori Masala Leg of Lamb recipe, is the one you have to make, you'll come back to it again & again! 😋 Now I know it does take some patience, but it is easy, I promise, and worth it. Juicy, tender leg of lamb that can be pulled off the bone, served with buttery, Zaatar spiced parsnips, carrots, and baby potatoes. Cooked long and slow, you won’t need a knife to carve this, just pull the meat off the bone. 1 kg leg of lamb 3 tbsp oil 4 tbsp greek yoghurt 1 1/2 tbsp tandoori paste 1 tsp turmeric powder 1 tsp Kashmiri chilli 1 tsp cumin powder 1 tsp chilli flakes 1 tsp tandoori powder 1 tsp black pepper 1 tsp ginger and garlic paste 2 tsp chilli powder 1 tbsp coriander powder 1 tbsp vinegar Whole spices - Few bay leaves, cloves, cardamon pods, cinnamon sticks, star anise 400ml water In a bowl, pour oil, add greek yogurt, tandoori masala paste, turmeric powder, chilli powder, tandoori powder, kashmiri chilli powder, chilli flakes, coriander and cumin powder, vinegar, black pepper and ginger and garlic paste. Mix everything and cover the leg of lamb all over with the marinade. Marinate for 2-3 hrs or overnight. Place leg of lamb in a roasting tin. Sprinkle over the whole spices, and pour water. Cover with foil. Cook in preheated oven, 160c for 2 -2-1/2 hrs, until the meat is tender. Baste over with the juices. Enjoy with roast potatoes and vegetables. Vegetables 4 Parsnips 4 carrots 15 baby potatoes 2 tbsp olive oil 1 tsp zaatar 1 tsp chilli flakes 1 tsp black pepper 1 tsp salt 1 tsp thyme Few Cloves of garlic Few sprigs of thyme Peel and chop the carrots and parsnips and steam with the baby potatoes. Place in a roasting tin, drizzle over olive oil, add butter, Cloves of garlic, zaatar, chilli flakes, black pepper, salt and thyme. Add a few sprigs of thyme. When 45 minutes of cooking time is left for the Leg of Lamb, pop the vegetables in the oven for 45 minutes until roasted. #holidayseason #holidayrecipes #holidayfood #roastlegoflamb #lambroast #legoflamb
