Hi, I brewed a couple of times and I got great results, the only issue was with too much carbonation. I put 6 grams of sugar per liter, it's too much?

I don't know if anyone watches this in 2024 but I just noticed your math is a bit off as regards to your grain bill. 80/20/10% would be 7/2/1. This equates to 72.7/18.2/9.1% when rounding to 1 decimal.

As someone who was a homebrewer for over 15 years, I easily made beer better than I could ever buy. I mashed my own grains, used liquid yeast cultures, and had a couple of used refrigerators that I used for cold conditioning. I also had a lot of equipment that I paid very little for most. Making beer at home is the $300 (when I started you could begin for about $50) hobby that can quickly become a $3000+ hobby. If you watch yourself, you could easily make excellent beer with about $1000 in equipment and supplies. If there’s a homebrew club in your area, join it… you’ll learn a lot and make some great friends in the process. Cheers!

A German is sitting in a pub in the evening and drinking one Weissbier after another. Suddenly his friend rushes into the bar and says: "Hey, your mother-in-law has died." He raises his head and hand and says: "bartender, a dark one please!"

Do most people pour the whole starter/wort into the fermenter? I've seen ppl put it in the fridge to let the yeast settle then pour out the wort, then put the yeast in the fermenter to avoid any off flavors.

Nice video! As a German I have to add this: More foam! It looks a bit sad in the video. You got the right glasses, but almost the whole top part should be foam. Like a good 5cm, going a bit over the top, it's a bit of an artform to always get it right. If you don't get a foam mustache going for that previous first sip, you are not doing it right. And Kristallweizen.... don't. You want the yeast, that gives the name and flavor. You should swirl out the yeast that settles on the bottom for the last part of the pour to get everything of the good stuff. Removing that to make Kristallweizen is not the way to go! Yes, you can get it sometimes but it's neither traditional nor common, fortunately!

you could've done under pressure in a "cheap" fermenter. These beers were done completely different

I have a cheap plastic fermenter, but I ferment in a (free) fridge with heater and temperature controller (Inkbird: still cheap), so have pretty good control of the temperature. I was interested in your squeezing of the bottle to remove the small amount of air: my understanding was that the air helps with yeast growth before carbonation. Is this a myth?

I wish I'd been here, I love smoked beers, Schlenkerla's rauchbier is one of my favourite beers, I'd have given it a much deeper critique because i would have probably drunk the lot! A brewery in the UK, Steam Machine, produced one made with birchwood smoked wheat malt that they smoked themselves and it was delicious. But maybe growing up in idyllic rural England and having regular bonfires, wood smoke infused stuff doesn't put me off...

A rolling pin works for me, it's a bit tedious though, especially for big batches, someday I'll splurge for the mill. I only have a limited space where I live so even if I could get a mill It’s not a good idea.
