Well I tried this exactly as your recipe. Pressure fermented and keeged within 7 days. Drank it on the 8th. It was excellent and my mates swilled it happily. A German friend of mine was very puzzled with the "Steam Beer/Dampfbier" label too, but drank it and questioned the hell out of me as to its ingredients. This is oon my repeat list . Thanks

I only usually ferment for one week, after one more week in the keg it will usually slightly change but really not much.

These other KZbin doing daily vlogging have a whole team writing their scripts planning the video out step by step, and a whole other entire team just for editing and uploading. The fact you did it by yourself is ab incredible feat.

very cool. I probably would have just done a Hefeweizen recipe if I was using that yeast. I've done a 7 day hefe before and it got a silver medal in a local competition.

There are three types of Dampfbier: Bavarian Dampfbier: Pale in colour, barley malt only, mild hopped, top fermented with bavarian wheat ale yeast. Northern German Dampfbier: Pale in colour, barley malt only, well hopped, bottom fermented at ale temperatures California Steam Beer: Amber in colour, barley malt with some crystral malt, well to heavy hopped + often dry hopped, bottom fermented at ale temperatures.

Hey Martin, after watching your video I did a test, brewed a brown ale, fermented half for 7 days and the other half for 14 days. I bottle conditioned samples from both. The 7 day batch gave me a headache (fusel alcohol, more than likely) The 14 day had a less bitely taste. More than likely the 14 day had a longer maturation phase. Always enjoy your videos. Cheers

Cool to hear of this experiment. 7 days worked for this yeast strain but I can see it struggling with others.

I just fermented a blueberry raspberry wine, and I’m distilling it into a blue/rasp brandy today! I’m so excited and I wish you were here to taste it with me

I do a lot of beers grain to glass in a week or less. Kolsch, Saisons, IPA with Kviek is 6 days or so grain to glass. Never had a "green" tasting beer. IMO the fresher the beer the better. Unless it's got a lot of dark grain like stout or dubbel, trippel / quad. I ferment on the hotter side generally too so no diacetyl rest.

Wow! I did a kviek IPA on Tuesday and how's to have it ready for Saturday, but no luck. Even at 90f , just wasn't done. And then I ran into your channel! Kinda cool that we did this simultaneously. Gelatined yesterday, ready to keg tomorrow.

Congratulations. The fastest brew I have ever done was a 10 day beer for a party one of my coworkers was giving at this house. Since it was for a mainstream crowd, it was dead simple. 6# light DME, 0.25# light crystal, 2 oz. Goldings, California ale yeast (1056) from starter for a 5 g batch fermented in my basement (~60F). Racked once, kegged the day before the party and force carbonated. I was a little surprised it seemed to be ready in time, but I must have done something right because the keg was empty when I came home.

I've got a British amber ale (cornish tribute clone) fermenting under pressure at the moment. Brewed yesterday so fingers crossed this ones ready in a week

In late 19th century US, there was a style known as "Wiess Beer" defined by using whatever grain was plentiful, fermented as quickly as possible, and packaged before fermentation was completed. It was very popular with the lower class and earned itself a not great reputation. One of these days I'll gather up the courage to brew one!

The fastest I've ever drunk beer (and it was already properly drinkable) was after 3 days directly from a pressurized fermenter.

I have been experimenting brewing with my sourdough starter. It's a fun thing to play with. I can turn around a hazy IPA in 5-6 days, and I can turn around a bone dry saison in 6-7 weeks. Lots of hops suppress the funk, low hopping rates accentuate the funk. Also promising for some Belgian styles. Long story short a Hazy IPA can also be turned super fast!

I released a Dampfbier at my brewpub a couple years ago using 100% Pilsner. I need to give it another go with 100% Munich. From what I've researched, the Munich would be more historically accurate (late 19th century) . And they wouldn't necessarily rush fermentation - they just didn't have the best temperature control. I love the style and it's history. Good work and thanks for the video!

For your next challenge I would go through some strange beer styles that few people have hear of. My home brew club pulled beer styles of out a hat to brew and we pulled "Breslau-Style Schoeps" and everyone is like "wut?"

Looks good, but seems more like a weissen. When someone says "steambeer" i immediately think of new-world "california common". Can you explain this style please?

how much water did you use for this beer? i just bought a clawhammer brewing system but not sure on hom much water i should use as there is no sparging. thank's

Depends how much grain and hops (ingredients absorb some water, lowering the wort volume) but I usually end up needing about 8 gallons to get 5 gallons from a 1 hour boil

man you have a lot of expensive equipement,i have minimal stuff but then again i am a senior on a limited income..enjoy your videos..ps what i do have i purchased before i retired,brewing 7 years now

The first thing you learn as a homebrewer is that the yeast makes the beer, so... yeah. It tastes like a Weissbier because of the Weissbier yeast... That's nothing surprising. If it tasted like a Doppelbock, then yeah.

Great job as always, Martin! 🤘🏻Definitely a beer on my To-Brew list. For the tasting session, can we get unbiased/uninfluenced reviews and notes from each of you before you discuss it, please? Bringing up “banana,” “Hefeweizen,” and “wheat beer,” during the tasting felt as if it heavily influenced the banana comment toward the last of the video.
