My mom used to make something similar and it was always a hit with company. Only she used either coconut sugar or organic unfiltered honey instead of Lucuma. After making the balls, she then rolled them into semi-fine coconut flakes. A couple months after she died, we found a small tin in the fridge with some still in it. Divided up and shared a happy memory.

I wonder if a little coconut or olive oil on the parchment paper would help peel it off better? (Which has gotten me curious on just what parchment paper actually is made of. I've never been a cook and have learned over the years to be wary of many things once taken for granted.)

I've been shying away from anything fungal for decades so am clueless on mushrooms. Is lion's mane bitter in taste that so much sugar is being used here? (cashews/lucuma/coconut sugar) And does it need to actually boil? (Also have been eating closer to raw.)

Nonstick pans are either toxic or the non-stick wears away fast anyway. I'd just get put a dollop of coconut oil (unrefined) into a sizzling hot pan and keep adding another for each cake. No toxins and actually good for you. Salt: I believe the bad thing about salt is not the actual salt but the anti-caking elements they put into it. Use Himalayan pink salt. Minerals and the electrolytes your nervous system has to have in order to send signals to muscles and so forth. Salt is not evil. Chemical crap made by humans... yes. Stay away from that stuff!

A family member is on a very low sodium diet and has been getting Heinz no salt ketchup (contains potassium chloride instead of sodium chloride). Unfortunately, after years of using it, Heinz no salt ketchup is suddenly no longer available in our local stores. So a homemade ketchup is just what we need to take its place.
