Dishwashing was my first real job, line cook next, then kitchen manager. - wanted to make more money, sold cars, moved to finance and then eCommerce for the last decade… Even now, I still have dreams of getting back behind the line and rocking a dinner service. The high of winning in the kitchen is intoxicating to this day and the lessons I learned in my teens and twenties I never forget.

I completely agree that it's not right to dictate. How many courses are? How much money a person has to spend? The customer should be able to dictate and get however much. Or how ever, a little they want.

The word "Restaurer" in French means "to restore" or "to renovate". This is why I go to a restaurant.....to recharge with great food, people and service 🙂

Ive been to THOUSANDS of restaurants all over the world, the most busy ones are the most comfortable ones with a friendly service. The food is important too, but if it meets the standards thats all you need.
