I have never seen anybody add so much milk in mashed potatoes. I’m absolutely not knocking your potatoes because actually they look scrumptious and I’m gonna have to try them like that. TYFS❤

@epicuricloud no, it's plastic. And a rather large spring. And when I put the adjustable slicer in per your video, it won't adjust. It doesn't come in contact with the adjusting mechanism on the lid

@epicuricloud i figured it out. The adjustable slicer came apart. This spring and locking collar was supposed to integral to the adjustable slicer. It was never assembled or came apart.

What makes the best potatoes is not the milk it's not half and half it's heavy whipping cream and the butter that makes the best is Land O'Lakes That's what makes the best mashed potatoes.. That's too creamy, almost runny I knew that would happen when you put that much milk in there. Heavy whipping cream would have been better and you don't have to use that much

Why does my dough climb the dough hook?
@epicuricloud
@epicuricloud 3 күн бұрын
For some doughs it does - it just depends upon the recipe and the hydration level of the dough. My sourdough always climbs the dough hook. Not all dough recipes form a distinct "ball" of dough.

When you put flour on the counter when shaping, was that bread flour, or rice flour? Does it matter what kind of flour?

Great question - I use bread or all purpose for the shaping. The rice is just for the banneton basket to prevent sticking.

Will give this a try, but didn’t see the point of moving it to another container to do the stretch & folds, I’ll just do them in the mixer bowl. Also very rarely make artisan loaves anymore as the mixer sandwich loaves are much more practical for our needs.

For me it's easier to scrape up the dough for stretch and folds in a flat bottomed container - also , then it's already in the bulk fermentation container. Happy Baking!! ❤️

Glad to see that you’re using the stand mixer especially for the initial mix. It’s very helpful when you’re making a double batch dough. I also prefer the rectangular plastic bins for any stretch and folds and they fit and stack easily on bottom shelf of my fridge. Yesterday we had a cold and rainy day and I made 6 boules for gifts. Baked at 450 in covered Dutch ovens.Even after temping the baked boules, they were still a bit damp inside. I did two more additional times in oven at 425 before removing them for cooling. I gave them as gifts to the folks at Cooper Hospital PT. Hopefully they were ok. Thank you. Joseph.

I've used mine twice now and am not loving it! I made mashed potatoes yesterday - that went pretty well, but I had to scrap the sides frequently which, in my opinion, isn't very easy. It' awkward working around the beater. Today, I made cookie dough and the batter continually coated the sides. It is just awkward and time consuming to stop the operation frequently to scrap the sides. Is there an answer for this issue? I appreciated your thorough review of everything. (Also, how do I find the motor information? It's not on the box or very limited manual. It's the 6 qt. model. Thanks for any help!
