Why are you using all purpose flour instead of bread flour?

You can use all-purpose flour or bread flour. All-purpose flour is convenient for most, but bread flour produces a chewier crust. For this soft white bread, I wasn't looking for a chewy crust. I like to use bread flour for pizza dough, rustic loaves and sourdough.

When I made my first batch there was quite a thick layer around the inside of the bowl at the end that I couldn't get out with a spatula as it was so frozen. Did I do something wrong or is there always a layer left and you just have to discard? I was also wondering whether it's possible to make several batches in the same bowl, one after the other - how long does the bowl stay cold enough? Many thanks, Virginia

If you let the bowl warm a little bit after churning and removing most of the ice cream - you should be able to remove the rest. You may need to wait a bit - approx. 15-20 minutes. (I only recommend plastic or silicone tools for scraping the sides, you don't want to accidentally scratch the bowl) The bowl does stay quite cold for a while - but it's only cold enough to make one batch of ice cream at a time.

I've had this ice cream maker for 4 yrs and finally used it. Followed your recipe but used almond milk instead of half and half and added some cocoa powder. This came out amazing right out the bowl! Why haven't I used this sooner. Thank you for this amazing step by step.

The 7qt. is really only larger in the bowl. The housing of the mixer is about the same size.

I fresh mill my flour. I am going to try to use your techniques, but not follow the recipe ingredients since I prefer to use oil instead of butter and honey instead of sugar. Also, I do not use milk. Hopefully my bread turns out looking as wonderful as yours!

Hello There - I have used this recipe for yeast rolls in the 9-cup food processor. First I pulse all the dry ingredients together using the plastic dough blade. Then I drizzle in the wet ingredients while the unit is running. The dasher will push the mixture onto the interior wall to freeze and then will scrape it off. Is that what you meant?

Thank you for this throughout explanation on how to use this food processor. I love the slicing and dicing function. And the storage in the bowl function is so clever, because the truth for all attachment boxes is, if you need to store them away in a cupboard, you will not use them a lot. However, I would love to buy the french fries disc separately and I'm missing a tool for whisking. The 9 cup FP has a whisking disc, would be great if Kitchenaid would provide it for this FP as well 😊

I wouldn't use a food processor for a lot of baking tasks. Things like most cookies, cakes, larger bread recipes - I like a stand mixer for.

kitchenaid ARTISAN. after one minute os starting turning the dasher stops stuck but the litchenaid keeps turning. I was wondering if it has to do with the walls of the bowl too frozen?

it is really weird because the bowl has been in the freezer overnight and then when I attach it to the KitchenAid and the Dasher starts turning, I add the mixture which is also cold in the fridge and then after one minute or so the dasher stops running and it’s stuck, although the KitchenAid at the top keeps running. then I cannot remove the mixture because the walls of the bowl are so frozen from overnight and I think that might be the reason why the Dasher stops running then if I wait like 15 minutes, then I start over and then the Dasher keeps turning without any problem, but then the mixture doesn’t turn into ice cream but stays liquid because the bowl isn’t frozen anymore. I am so disappointed I really don’t know what to do about this

I'm sorry that's frustrating. I wish I could take a look at the place where you have the attachment onto the mixer. I wonder if that came loose or perhaps the head of the mixer wasn't locked down?? I'd be happy to look at a photo of your set up. [email protected]

I have found with custard style ice cream, if the eggs are added to the cream, milk, and sugar to be fine with, there is no need to temper the eggs. I do it all the time with the results the same as if you tempered.
