it's a really cool explanation, but as a pastry chef here I'd recommend you to heat up the mixture just until it boils, that causes the sugar tu crystalize in particular ways and then bring it down to about 35°f at the fridge for 8hrs before churning the icecream, it will increase it's texture and stability

@epicuricloud Жыл бұрын
Hi Rena - It really depends upon what mixture you're making. If it's a cooked mixture - I'd make the day before. For completely uncooked mixtures, you can just put it back in the fridge once everything is mixed up and get it fully chilled. (I didn't hear myself say 30 minutes) but you can certainly check it at 30 minutes and make sure it is chilled.

The closer to 32°F the mix is before putting it into the ice cream maker, the smaller the ice crystals that form which means smoother ice cream.

When I made my first batch there was quite a thick layer around the inside of the bowl at the end that I couldn't get out with a spatula as it was so frozen. Did I do something wrong or is there always a layer left and you just have to discard? I was also wondering whether it's possible to make several batches in the same bowl, one after the other - how long does the bowl stay cold enough? Many thanks, Virginia
@epicuricloud2 ай бұрын
If you let the bowl warm a little bit after churning and removing most of the ice cream - you should be able to remove the rest. You may need to wait a bit - approx. 15-20 minutes. (I only recommend plastic or silicone tools for scraping the sides, you don't want to accidentally scratch the bowl) The bowl does stay quite cold for a while - but it's only cold enough to make one batch of ice cream at a time.

Nice presentation - instructive and entertaining (not to mention mouth-watering) - one very important instruction the host did not mention was just after the beginning when she took the freezing bowl out of the freezer - she should have emphasized that the churning process should be started as soon as possible so that this freezer bowl has not begun to thaw out just sitting idle on the countertop...the bowl must be as cold as possible during the churning process.

Hi Sandra - I'm not sure about altitude and ice cream - I hadn't heard of any issues with that before. Could the bowl be washed in the dishwasher with dis washing liquid and a lower temperature wash? I mean tap water heat sits around 70c (not sure what that is in fareheit off hand)? As my understanding is the attachments get corroded with the use of dishwashing tablets as they tend to be more corrosive and abbrasive as where dishwashing liquid is as safe as what you would use in the sink, also providing that the temp doesn't exceed the round about temp as tap water, i think it would be ok.
@epicuricloud2 ай бұрын
Hi Gary - KitchenAid doesn't recommend dishwashing the ice cream bowl portion of the attachment set. The dasher itself and the small plastic attachment pieces are dishwasher safe. The bowl itself has a sealed compartment that contains the freezing liquid. The bowl needs to be hand washed - it really only takes a short time to wash it out. Thanks for reaching out!

I set it a little faster than that now. My first batch i made, i set the mixer to like 3 or 4 (mine doesn't have a "Stir" setting. It seemed to take forever to freeze, but it didn't bind up and the ice cream came out great. My second batch, i set it slower because i'd read somewhere that it freezes quicker, and that the stir setting is the equivalent to 2 on mine. SO i set it to 2, and after about 10 minutes... it slowed down for a second, then BOOM, the dasher froze to the bowl and snapped the cheap plastic coupler. Just now, i made a batch of coffee ice cream, used #3 setting, a little fast, but it came out perfect after like 20 minutes. Doesn't taste all that good because i just used cheapo coffee. I need to get something a little darker roast next time, for the flavor to come through. If i had to buy this attachment again, i would not. It's only a matter of time before that cheap plastic coupler breaks again. Kitchen aid doesn't actually sell a replacement part. You have to message them and beg them to send you another. So if that part breaks and they don't send you a replacement, just throw away the whole thing, because it's useless without that part.

@@epicuricloudthanks for your response, I used full cream milk, is it possible that I didn’t mix it enough before putting it in the freezer?
