Dont forget to make hazelnut butter. You can also add dark chocolate to make your own nutella without all the chemicals like store bought. If you like hazelnut coffee, put a ratio of 2:1 (coffee:hazelnut) in blender to make your own coffee. Hazelnuts are very heart healthy if you have CAD (coronary artery disease). So, just to be clear...when using the canned chickpeas, you don't cook them at all, right? I tried it with uncooked canned but when I soaked overnight the water didn't have that amber hue at all. So I soaked a couple more nights and it seemed more like aquafaba. Also, how long will it keep in the fridge? Probably best to freeze into ice cubes, right?

I don't cook the canned chickpeas. If the water doesn't turn into aquafaba, I would try a different brand. Nowadays crops grow on nutrient depleted soils, so most of them are just poor quality. I wouldn't keep aquafaba in the fridge for more than a few days. I like to freeze mine and use it up within a few months.

@@BiancasKitchen thank you so much for your detailed answer. Very helpful! I'm mainly using aquafaba as a binder for making my own "Just Egg" from yellow mung beans so they won't break or fall apart so easily...also using it for my lite tempura batter for sushi, as an egg replacer.

Hi, I love not havig to worry about using up a liquid ivy soap...still the liquid could be fine for handwashing... To chop them per use is handy, and I wonder if you've done a DIY bag? I'm thinking it would need to be natural fabric to allow water to move through it more freely? Also, pretty sweet to be able to freeze leaves for future usage...Niiiice! Below, you commented about other leaves with saponins, for the gentleman in Bali who couldn't find any ivy....So, I'm set up for further experimentation. Thanks so much, and nice to meet you:)

Hello Linda, thank you for your kind words. For a DiY bag, I would use cotton or linen (polyester wash bags from the store only work because of the tiny holes in the mesh fabric)

I currently use Himalayan salt, but any rock salt is good as long as it has no added idodine (that form of iodine is said to be potentially toxic)

@BiancasKitchen Thanks for your explaination. I have tried making aquafaba and it did not whip up fully, staying just modestly fluffy, even with cream of tartar. I assumed my aquafaba was too weak, even though it was only 4 cups of fresh water over 2 cups of beans (previously soaked overnight). What did I do wrong?

I think I would try a different brand of chickpeas. Nowadays most crops grow on nutrient depleted soils, so not all of them are as nutrient dense as they should be...

I love your recipe. The only thing different I would do is grind the flaxseed first, I’ve read so much about the flashy does not break down unless you grind it into a powder first if you want the rest of that nutrition that’s only thing different I would do just a suggestion, I love the recipe though

What you do with crab apples is, you make apple cider out of them. If the trees are on your land, you graft better apple varieties onto the root stock.

So - I heated for 2 hours - slightly bitter and a drying taste left over - I kept it on low per the directions - should it have been heated at a higher temp for 2 hours? Should the bean covers be removed? haha Im on my 10 batch and still not working great - although your method MUCH better than others so far - aiming to make greek style yogurt as an end product:)

It sounds like you did everything right. I never remove the bean covers. Maybe try using a different brand of soy beans? A lot of people say it makes a difference.

I've been using it for years -- it's the real deal. Pro tip: It loses some flavour when it's heated, so add it last if you're cooking with it, or use it as a finishing salt.

I never use a thermometer, I think 80-85C (175-185F) would be good

So after covering them in boiling water you say you let them cool before putting them in the fridge. How do you let them cool? Do you just leave them in the counter and for how long before putting them in the fridge? I want to try this soaking with boiling water for black beans and see if it gives them a better flavor. Yes, leave it on the counter until it reaches room temperature (approximately 2 hrs).

Back in 2021 when I made the video I still used tap water. I now only use home distilled and filtered water (I have a Vevor distiller with a charcoal filter) because it's the cleanest and purest water that one can drink.
