// INGREDIENTS //
• 1.5 cups buckwheat flour
• 1.5 cups oat flour (certified gluten free if necessary)
• 1/3 cup hulled hemp seed
• 1 teaspoon rock salt
• 1 package (about 7g) instant yeast
• 1 cup grated sweet potato
• 1.5 cup water
// METHOD //
Mix the buckwheat flour, the oat flour, the salt and the yeast in a big mixing bowl, using a spoon. Add the hemp seeds and mix. Add the water and the grated sweet potato and mix with the dough hooks.
Let the dough rise for 1 hour. Preheat your oven at 395F (200C). Line a 9.5 x 5 inch (24 x 12 cm) loaf pan with parchment paper. Fill in the dough and smooth the surface. Bake for 50-60 minutes until a wooden skewer comes out clean.
Place the bread on a cooling rack and cut it once it has completely cooled.
