Hi friends! In this episode of Bianca's Kitchen, I'm sharing my recipe for delicious air fryer beef seitan! This vegan meat substitute uses vital wheat gluten as its main ingredient. Some people call it „wheat meat“ oder „gluten meat“
Compared to tofu and textured vegetable protein (TVP), seitan ist more time consuming but the result is very delicious and so tasty! Most vital gluten packages contain preparation tipps but the pure seitan has a very dense texture. If you prefer a lighter texture, you have to add other ingredients.
This mock meat is a beginner friendly recipe and ideal if you want to try e.g. Meatless Monday. It's a great start if you're new to vegan food and looking for a low key dish. The raw seitan dought can be stored in the freezer for a few days or be frozen. It also can be used for many other dishes that imitate meat and fish, for example vegan chicken salad or vegan tuna salad (recipe: • 😋 THE BEST VEGAN TUNA ... ).
In this video I share a few of the many possible ingredients that you can add to the vital wheat gluten. Others that I haven't tried yet include instant mashed potatoes, tofu, lentils and lentil flower.
This recipe uses vital wheat gluten flour which can be found at many health food stores or purchased online, e.g. from the Bob's Red Mill website: www.bobsredmill.com/vital-wheat-gluten.html
My air fryer is a Philips Starfish (The air fryer shown in the video is a Philips Starfish (amzn.to/3s3lka6). We use it several times a week and highly recommend it!). Philips is the air fryer original and I highly recommend the brand!
// VEGAN AIR FRYER SEITAN //
Ingredients:
● 2 cups vital wheat gluten
● 1/2 cup mashed potato
● 1/3 cup nutritional yeast
● 1 cup plant milk
● 2 tablespoons chickpea flour
● 1 tablespoon tomato paste
● 2 tablespoons soy sauce
● 1 teaspoon mustard
● 1/2 teaspoon black pepper
● 1 teaspoon paprika powder
● 1 teaspoon garlic powder
Method:
Fill the vital wheat gluten, the nutrional yeast, the chickpea flour and the black pepper into a bowl. Mix everything with a spoon or a fork. Add the plant milk (in the video, I use my homemade oat milk: • HOW TO MAKE OAT MILK ♡... ), the mashed potato, the tomato paste, the soy sauce and the mustard. Mix with the dough hooks until everything is incorporated.
Cut the dough into pieces. Since they will expand, I cut my dought into 45-50 very small pieces. Bring about 10.5 cups of water (2.5 litres) to a simmer, NOT to a boil (water must not be bubbling!). Stir in the paprika and the garlic powder or any spices of your choice. Simmer the seitan pieces for 40 minutes, making sure the water never bubbles as it will affect the consistency.
Strain the seitan and let it cool down. Fill it into a bowl and add some oil and spices of your coice. Mix everything with a wooden spoon or spatula. Fill the seitan into the air fryer basket and air fry it for about 11 minutes at 395F/200C until it's crispy. Enjoy!
