Yeah, it's so exciting. Been to Zanzibar before. I connected so fast m well with tye locals given I speak fluent swahili. U mentioned Nungwi, the turtle conservation must-visit on the island. Some observations n remarks Rita... The coconut grate can also be used for making a dessert. Simply put in melting sugar in the pan, stir until sugar infuses in the grate and has forms a mold.add food color if u want. It's called kashata. spread the knead on a flat surface n stretched like chapati but with some thicknes. Cut n rectangle pieces n shapes, or u can make balls if u choose to. The inner hard coconut shell u suggested could be recycled is called kifuufu, vifuufu is plural. It's is used as fuel fire wood. Also good handcrafts are made from them especially dhow-like shapes. My mother would also make the equivalent of coconut dodo at home with cream. Also tastes so good. Try it as well, u will thank me later, I have no doubt. And while u r still in Zanzibar, not sure if u r anyway, try go for traditional swahili dishes at a place called Lukman. They serve a variety of dishes, all mouth-watering n finger leaking ones.

Cook on 170 degrees, then 200 degrees for the last 2 minutes, it will be more tender and succulent and still crispy.
