That is not allioli. Just garlic, salt and olive oil. No eggs and no lemon juice.

This is exactly how my Papu made it in the Bronx when I was a boy. I remember exactly the recipe, except for a couple of extra ingredients that we added. Number one extra ingredient was a pack of Tapioca Pudding and Number Two extra ingredient was raisins! I believe that he also combined Regular Milk withe Evaporated Milk too! For thickness!

ALLIOLI. Do you know where the word comes from? In Catalan, garlic is said 'all' (pronounced like “eye”), and it is said 'i' (pronounced like “ee”), and oil is said 'oli'. If you put it all together, ajoyaceite (garlicandoil), it is said and written 'allioli' (pronounced “eye-ee-oli”) not the cheesy aioli. It's very tasty, but don't eat an L, and pronounce it properly… is it too much asking? Protecting our gastronomy is conserving our culture. ALLIOLI.

I live in the Midwest. In my location is near to impossible to find the ingredients, so substitution is a must, my late father, who was born in Villaviciosa would dish approve me calling what I cooked last night Fabada Asturiana; but I am telling you, even without the right ingredients it smells very close to it. Just stored some for the week and reserve a portion for lunch or dinner today. I would let you know, when I eat it what exactly my substitution list was. Thanks for sharing. Gracias ho!
