Excellent recipe. I have made the mistake of heating the oil up too much in the past and overcooked my fish. Keeping the heat on medium is such a simple and important tip along with the flour in the oil to make the fish crispy. Thank you so much!

How to ensure.chicken is cooked?. How much time we need to fry the omlet to ensure chicken is fully cooked?

If we add little crushed garlic and thai red chillies to the omlet, would that be ok?

Hi Nin, In my Thai green curry paste, after I make it, it has very tiny thread like, fibrous, chewy structures possibly from lemon grass. They do not give a nice feeling in the mouth. Do you have any suggestions on how to solve this problem?
