I once stayed at a small hotel in Thailand. The owner and her family grilled a fish one day, similar to this, and invited me to sit and eat with them. I have many happy memories of Thailand, but that evening was special.

Hi Nin, I had a Thai friend in Germany, and she taught me to make 2 bamboo shoots recipes one with beef and coconut milk very spicy, and the other fried bamboo with scrambled eggs and chili peppers, they both are So delicious with steamed rice 🤤 And this recipe looks very delicious too! Thank you, I can't wait to make it 😋

Khao Soi is my favorite Thai comfort food dish! I love Nin’s authentic preparation. They included the shrimp paste. For many westerners that’s a difficult flavor/aroma but if you leave it out you will notice its absence. Use it!
