Thanks Nin, just found your channel and so happy I did. I can't wait to try your recipes for pad thai sauce. Definetly the tamarind recipe will be a fav but good to have the other versions such as the ketchup when no tamarind is available. All products you used are readily available at my local Asian grocery stores.

For sourness, I just use lemon juice now. Last time I bought tamarind pulp, it sat in my fridge for an extreeemely long time occupying space since I only make tamarind-thai recipes occasionally. It is not a very versatile ingredient.
