I haven't made there's 2 items Wellington ,& pig in blanket but have use it in sandwiches wraps ect & with most veg with cheese is very yummy just before adding cheese add caramelised onion relish would be good in vol-au-vents & other pastry dishes I think a lot of relishes,pickles,chutneys would be nice in a lots of pastry dishes too

That all looks amazing. Do you glaze your pastry? I either glaze my pastry with melted vegan butter with a little golden syrup for sweet pastries OR vegan mayonnaise works well on savoury pastries like your wellington.

Most Thanksgiving dishes are really simple. The key to nailing the dinner is mastering the logistics of making everything done at the same time. And that mostly means making everything done when the turkey finishes. I understand that you may not be able to find a real turkey, but making a good bird is half the battle. If you aren't careful, it can dry out. I brine the bird for 24 hours with salt and sugar, then slice up about a dozen lemons or oranges (any citrus fruit), squeezing the juice out. Wrap it in foil while it cooks to keep moisture inside. After the meal, boil the bones for 2-3 hours and make a bone broth. Remove the bones, add celery, carrots, onion & boil about half hour. Add egg noodles and loads of leftover turkey for amazing turkey noodle soup. Season to taste. Make a couple gallons and freeze it in small containers. You really need to try a pecan pie. Very traditional in the South, and I absolutely prefer it.

Just noticed that you had a Thanksgiving video. Many foreigners don't realized the effort involved in a typical Thanksgiving meal. Americans generally share the labor with friends and family. It is truly a holiday for friends and family like the first Thanksgivilng. Usually the person preparing the turkey hosts the meal at their home. Others bring the traditional sides and desserts as well as any extras that they want to bring. Everyone shares the work and each other's cooking.
