Easiest way is to be ASATRU as you get some of the best temple building/religion bonuses to knights. Then stack Camelries/Blacksmiths and Knight Academy buildings, just make sure you are under direct control of those buildings otherwise you wont get the bonus.

I did somenthing similar. I started as eastern slav. Went east to Mongolia and became the Khan of Khans conquered everything that was the old Soviet Empire and Persia (a old Russian ambition). Then I create the most communist religion (but with theocratic) and culture I could, but I still mantained a Politburo, meaning a rulling class of nobles. I did had a LOT of Counties with Peasant Leaders, but not to the point that it would create a gigantic revolt or lose to much money. I was also able to create a lot of Theocratic Vassals of my communist faith, wich gave me a lot o money and levies. Having a stewardship focus can also increase your levies size and having a Marshall with organized levies wil create a unstopable gigantic army of peasants to defend your communist religion. Also do a legend that allows you to evangelize the realm. It is the best decision from a legend.

I prefer to be in Ireland, get Dublin and convert to Norse, conquer Ireland, Scotland and the northern isle. Become feudal and turn every British isles country feudal. Then eat up England and Normandy, capital in Normandy and establish Norman. Form England, capital in England form English then the empire. Then I’m bored and quit
