The wire stripper/crimping tool that was used to cut the M3 screw is either a piece of junk or was damaged prior to the demonstration. Decent tools of this type have a threaded hole on one handle and a clearance hole on the other. The screw must be screwed into the threaded hole from the outside so that the end that will be discarded is in the clearance hole. After the screw is sheared, unscrewing the screw dresses the damaged end. These tools are intended for cutting brass screws, not steel.

Honestly - mixing baking soda (mild base) with vinegar and lemon juice (acid) just makes a solution of Sodium Acetate .... giving off CO2 in the process of neutralising the soda. A simple solution of weak baking soda on its own will work better.
