Yep. Maybe the best Mac & cheese I have ever had. Had some leftover smoked ham from thanksgiving, so I diced some up and threw it in there. Great recipe!! Thanks Sarah!❤

I was able to visit when I was 15, that restaurant was still there, and almost looks exactly the same, and the same vibe. My four siblings and I loved the whole experience, and it was a great family vacation! That meal/show really stood out to me most. Thank you for sharing your trip, as I was able to show my wife something I enjoyed about 23 years ago. ❤ 😊

Recipe was good but in my opinion lacked complexity, I used Gerbhardt chili powder, I think next time I'll use Mexene

@@B_L_Smith first keyboard warrior troll since you have so much time on your hands, I said the recipe was good, I tied for third out of 11 at a work chili competition, everyone unanimously told me it tasted like stew and not chili. So i assumed if i tried a different chili powder it might help, i read that mexenes is a little more robust as a chili powder hence why i said that. My comment was my opinion, it’s not right or wrong just my opinion. I actually made this chili unlike some of the people here 👀 l concluded for my personal taste it was too time consuming and too expensive to not place first, so maybe actually try the recipe before you decide to run your mouth.

With my wife not being a fan of beans and/or ground beef in chili, I went digging for recipes and stumbled upon this one. Everything looked so good, and the steps were easy to follow. Ordered the Texas spices online, being in Nebraska, and put everything together today. The beef cubes just gave a much better mouth feel compared to ground beef, and added more and better flavor. The spice blend was great too, nothing too spicy, and a nice bite. It exceeded my expectations, and my wife was incredibly pleased as well. This will become a regular going forward!

Yea we brine the Turkey always. Comes out so moist. We also cut it up then when cooking take out the breast before the legs. (Nobody cares about presentation as long as your turkey is delicious.) Never thought to cut it up before the brine. Thanks.

I love the presentation of the spatchcocked turkey and you are right, nobody cares about your presentation when the turkey is delicious! HAHA Spatchcocking it makes a noticeable difference in how long it takes so if you're looking to cut down on the time, I'd suggest trying it out and seeing what you think!

I seriously don't know how you get the browning on the meat. I've don't it the same way but all the liquid prevents any browning it seems

I think its because I just walk away and abandon it. I don't open the thing, and don't stir, especially if I cook this overnight. The little pieces up top naturally brown and dehydrate a bit. That being said, it's not like meat candy on smoked pulled pork. It just a little brown and I guess looks good in pictures. I wouldn't obsess over it because I don't think the little brown bits add much to the flavor. The sauce you choose to add is what is going to razzle dazzle it up.

do you always leave a pan of water in your smoker? is it apple juice as some use or just water? never tried it but if it helps keep meat moist, I will try it out

It is strictly for moisture to keep the smoke chamber from drying it out. Some people say it's a "cheat" because they're purists but I say it's an amazing way to give yourself some grace if you miss taking it out or wrapping it at the correct times during the cook. Apple juice in the pan is 100% not needed nor recommended in my opinion.

@TheUrbanCowgirl In the video you use 2 Tbs of Fiesta brand chili powder and 1 Tbs of Fiesta brand cumin instead of the Texas brands that you recommend. Is this a suitable substitute for Mexene or Gebhardt? Any real noticeable difference in taste? I can't find Mexene or Gebhardt locally (Fiesta brand is readily available) and I would like to try this recipe this weekend. Thanks!

Mexene, Gebhardt, and Fiesta are all good. I prefer them in that order but use what I have on hand in the moment if I didn't plan or don't feel like going to the store! In my opinion, I taste a difference and that's where my order of preference comes from. It is slight between each one but there may be many people that don't taste the difference at all! :) I hope that all is clear as mud! LOL

Does the coffee have the same benefit as using cocoa powder? Is it helpful to use an ingredient that adds a bit of sweetness or maybe the onions provide some sweetness?

The coffee actually brings acidity to the chili which in turn brings out other flavors. Just as you add salt to every dish to bring out flavors, you should also add acidity. The coffee doesn't add any coffee flavor either so don't worry about that happening.

I have made chili from scratch in the past however I chose to fallow this recipe because of its simplicity. The only thing that I changed was subsituting the Brisket for Chuck roast, Our market didn't have Brisket. This chill turned out awesome! I would recommend this recipe to anyone, especially those who have not attempted to make a chili from scratch, loved it, thank you so much for sharing.

Get out a here. What a perfect time for some mac and cheese. Loving the Fall here in north Texas my friend. Waking up to 60 degrees instead of 90! So what a perfect warming dish to the palate and the soul. Oh, and the toppings are endless. Think I will be smoking me some mac tonight! What an awesome recipe. I have not been successful in making a "great" mac and cheese. This looks like the one.!! Thanks so much for your hard work in bringing into our homes such great recipes to warm our souls. My chili powder recipe 2 tablespoons chile powder note below 1 teaspoon dried oregano 1⁄2 teaspoon kosher salt 1⁄4 teaspoon white pepper 1⁄4 teaspoon smoked paprika 1 teaspoon ground cumi 1 teaspoon ground cayenne pepper To make chile powder dried chiles, usually 3 anchos, 3 chipotles and 3 guajillos. I cut off the stems, slit them open, and take out the seeds lay them flat in a foil-lined pan and them roast them in the oven at 350 degrees for five to 10 minutes. Take the roasted chiles, crumble them into a bowl and then grind them in a spice grinder or blender. I use a cheap coffee grinder. Note reserve it just for chili as it may impart heat to other spices even if washed well
