Those French fries look 1000% better than In N Out. Which is a bit of a backhanded compliment as In N Out's fries are nearly inedible which is why it's mandatory to smother them in as much shit as possible so as to be able to choke them down.

A few comments from Mr Science. Water will maintain a temp of 212 at sea level no matter how much heat you apply. It will boil faster and more vigorous but will remain at 212. This is called the latent heat of vaporization. When you put a lid on the boiling water, pressure builds inside and the water no longer feels the rooms air pressure and the boiling point begins to rise. The higher the pressure, the higher the temperature. The amount of pressure depends on the weight of your lid. When the pressure inside the pot climbs higher than the air pressure in your kitchen, It will slightly raise the lid to let the pressure out. This is the steam you see seeping out the sides. Only in an uncovered pot will the temp remain at 212. Oh by the way, I tried your method and its spot on, perfect every time.

Bro I appreciate the shortness and conciseness of this video so much. I've been cutting the top off then reaching down with a really thin knife to try and slice off the rind parts that hold the middle in. And then trying to hold it together while slicing horizontally across the entire thing instead of lengthwise like you just did. I cooked them differently so I prefer rectangular pieces over strips, but you're still going to save me so much time with the simple step of cutting the top and bottom off first and then stretching it out lengthwise I'll be able to cut all the white rindy part off that I don't like very easily rather than having to do it about nine separate times on every separate piece.

Just watched All Things Great and Small… They have soft boiled eggs for breakfast and my husband and kids didn’t know what they were! My aunt would make these for special sleep overs when I’d go to her house … Such sweet memories of her beautiful kitchen and old fashioned long white night gown, her careful fingers turning the eggs and placing them in blue and white cups… I have those same blue and white egg cups now and thanks to this recipe, I’m going to try it!
