Cpt Anduze at one point says "shooters are aviators doing a tour on the ship" (5:45) Unsure what that means, are shooters pilots as well or does the term aviator mean something I'm not aware of. Thanks!

Shooters are pilots, usually from communities that don't go to the boat--like P-3s or E-6s.

After 31:20 you talk about issues, here is an example on something wrong so they stop the launch and cross their arms kzbin.info/www/bejne/d33WmmR5pdWAg9Em30s Found no explannations on the failure we see here

Yeah it's interesting because you can see the pilot shaking his head to say "no" before the shooter takes a knee and crosses his arms, so something in the cockpit is telling him there's an issue.
