The water myth is a fallacy. I've made homemade bagels and pizza here in LA, and they were outstanding. Not exactly the same as what you get in NYC, obviously, but they were comparable. It's more about the quality of ingredients, the recipe itself and the passion put into the food. Just my opinion, though.
