RECIPE (there is no link in the description above) : 140gm cream cheese (room temp), 1 large egg (room temp), blend well together. Add 1/2 tspn vanilla extract, 2T powdered sweetner. Divide into 2 medium sized ramekins. Cook individually. Start 30 secs, then increments of 10 secs, 5 secs if needed. Chill 1 hour.

140g Philadelphia Cream Cheese (room temp) 1 Large Egg (room temp) 1/2 Tsp. Vanilla Extract 2 Tbsp Powdered Sweetner (must be powdered granules wont work as good) Mix egg and cream cheese. Once mixed add Vanilla extract and sweeter and mix again. Put mixture in buttered ramekin and microwave 30 seconds. And repeat in 10 second intervals till the edges are set but the center is still jiggling. Chill in fridge 1hr. Enjoy.

Many, many moons ago, my mother used to make Philadelphia Cream Cheese Pie. There was plenty of lemon juice as well as the vanilla. Oh it was so yummy, way too many carbs though. I will have to if there is a way to make something similar using clotted cream instead on condensed milk.

@@sixgunn98 No, the Momster Mom has it right, you have to soften the cream cheese before adding any liquid (egg in this case) to it, otherwise you'll have lumps. Beating the egg first will not prevent lumps, it's the cream cheese that's the problem.

I love to top mine with frozen blueberries (unsweetened) and a little Rediwhip. Yes, I know Rediwhip's not keto, but it's still a healthy treat, all in all. Oh, I also use only one packet of stevia to sweeten the cheesecake. Yum!

Thank you Gunjan for taking the time to post the recipe. Haven't tried it yet but I am sure it works well because it is the basic cheesecake recipe I have used for years. Only difference is the 0 cal. sweetener instead of sugar. Basic cheesecake: for each brick of cream cheese add 1 egg and 1/4 cup of sugar along with a 1/4 teaspoon of vanilla. If using powdered sweetener, you will need to use slightly less. Experiment until you get to the flavor you enjoy. Bake at 350 until center is almost set. For those without a scale, use 1 brick, divide into 3 smaller servings or 2 larger ones. Might need to adjust cooking time a little to compensate for difference in size. As for all of the critiques please remember, she is trying to do you a favor. It takes a lot of time to film, edit and post the videos.

This was very good. Additionally, I blended a handful strawberries in a tiny amount of water and added about 2 tsps of confectioner's Swerve. Then I drizzled it over each slice. It made the cheesecake even better!!🥰👍🏼

I tried this recipe using mini food processor, all in all not more than 10 mins of preparation, 15 mins of microwave baking plus the intervals. The cake is heavenly superb! I add a little of lemon rind and a dash of cinnamon powder. Super good

I made this and a few things I noticed. I blended all the ingredients with my hand blender and added a bit of heavy cream, about 1 tbsp. It got blended to a sauce almost watery texture and then I microwaved it as mentioned it turned out super delicious but it was a bit hard, not soft like cheesecake. Nevertheless, it was so yummy and amazing. I love love love this recipe. Thank you so so much.

Anxious to try. However, it is not Keto if you use Splenda because it is sucralose which is refined sugar! Monk fruit sweetener blended with Erythritol can be used.

Thank you for your recipe. Just a tip for the future you could use a whisk instead of a fork. cheep as a fork but helps blend better. In this recipe, start with a fork then switch to whisk for a smoother batter quicker.

This is delicious! I made mine today which came out better than the original... but I put some lemon juice in it which gave it a little sourness to it substitute for sour cream. I will make it many more times but will make crust with almond nuts.

To mix a very thick substance (cream cheese) smoothly with a liquid (egg) add a small amount of the liquid at a time and mix it in until smooth. In this case, beat the egg well first, then stir in the egg about 1 tbsp at a time, mixing til smooth after each addition. It will mix up smooth with much less effort.

@@DianaMoon11428 that wouldn't have helped if the egg was cold. The egg and the cream cheese should both be roughly the same temperature for easiest mixing. I believe she said they were both at room temperature in the video.

I just made this. Im obsessed, I used 1 tbsp maple syrup instead of sweetener(im not keto but low carb) and baked it (400F about 15-20 min), so good. will definitely be making this too often now. Lol

Thank you for these suggestions, comments. When I make this recipe, I will try baking them (both at same time, that’s a plus) in my air fryer (on bake of course). Your timing helps, I’ll have to convert for convection, it cooks quicker, but it’s a good starting place.

Nice advice too. I think i have been overcooking a lot of things because with mug cakes & similar it always says 60-90 seconds, but it seems you really need to microwave in small parts to make sure it dosnt get too much.

This recipe is very similar to keto pancakes I just made. For that you mix 2 eggs with 2 ounces cream cheese with half to one teaspoon cinnamon. Then you can add about a teaspoon of sweetener. But I seem to be allergic to most sweeteners, so instead I added a half plus teaspoon of vanilla extract. Then fried. Actually tasted a lot like crepes. In any case, really really good. Next I will try this cheesecake, but with vanilla extract instead of sweetener. And now that I'm about 4 weeks into no sweeteners of any kind, I find that I prefer no sweeteners. And all flours, including almond, are big triggers for me, so I cannot eat them either.

@@tonymurray814 Ah yes, triggers. Eating any flour, even almond, which does contain carbs, trigger me for more carbs of all kinds. Next thing you know, I'm eating regular donuts and baked goods. I need to be super careful of all carbs. Ditto for artificial sweeteners. Most cause me inflammation and lots of pain.

They don’t trigger me to surgery confections because I’m aware of the long term consequences. If I’m lucky enough to grow old I’d rather it be old and relatively healthy Rather then old and sickly!!

what powdered sweetener is just monk and stevia? I can not find one like that. I have digestive issues with many of the other types.

I have not made this recipe yet, but if one only had granulated sweetener, could it be added to the egg first so it could melt in the liquid of the egg? This seems like a really nice dessert to end a fancy dinner.

It would help if the cream cheese was warmed up a bit in a microwave (carefully) or over some hot but not boiling water.

@@kimrici8542 It's surprisingly... good? Better than I thought at least... It didn't taste like sweet scrambled eggs, BUT... it didn't really taste like that yummy, thick, and sweet cheesecake flavor either... I also had to make a lot of changes in her recipe because I could tell that what she did wasn't gonna be good. So here's what I did: I first blended the 5 oz of cream cheese. (All ingredients were at room temperature) Then I added the egg into the cream cheese. After I added the egg, I added a LOT more sweetener than her because I knew that 2 tbsp of confectioners Swerve WONT be enough. (I added 5 tbsp instead) I also added a LOT more vanilla extract as well because my vanilla extract doesn't give flavor at all unless I put a lot in whatever I'm cooking. (I added a fair amount without measuring) after all the ingredients were blended together (in a blender of course) I decided that instead of make two mini cheesecakes, I will make one small cheesecake and that's where the problem began... I put my cheesecake batter into a microwave safe mug and since I was making a bigger cheesecake than her, I put the cake in the microwave for 1 minute first. As soon as the one minute was over, I noticed that nothing had even changed except that the mug was hot, so I kept on putting it in the microwave (2-3 mins) over and over and OVER again and the cheesecake just wasn't COOKING!! (I probably wasted 20 minutes just taking it in and out of microwave continuously...) So finally when I noticed that there was a dark, kind of burning, spot in the middle of the cake, I stopped putting it in the microwave (even though it STILL wasn't cooked) and just put it straight into the fridge. So today, I tasted the cheesecake and... was surprised! But not because it was DELICIOUS... because it wasn't. It was... good I guess... like I said, better than I thought it was going to taste. (Basically I thought it was going to taste... not like a cheesecake at all, but it did taste like a cheesecake... a little bit though...) In conclusion, I will never make this cheesecake again because of all the struggle I had just to make this one little, not so yummy, cheesecake...
