I love all of the recipes. I make that spaghetti one or something similar to it often. I have made potato pancakes with left over mashed potatoes before, but not with the Mexican touch. I am definitely going to give that a go! Thanks!

By the way, when you forget a word in English I really relate because I have a Spanish friend who doesn’t speak English and sometimes when I’m talking to her I forget the simplest words (like “hot”) and have to make do with another word. I love the Spaghetti dinner!! My whole family adores it. Question, what is the final liquid amount? Is it 1 cup water with 2 tsp bouillon plus 1/2 cup milk? By the way you can get the rotisserie chicken flavor in your oven by roasting chicken thighs. I get my chicken thighs at Walmart 10lb for $6. I get 5lbs of cooked rotisserie meat for $6!
