Pro tip for when cutting up veggies - save all of your scraps (celery ends, onion ends & skins, carrot ends etc) and put them into a big ziplock in the freezer. Then once you have a full bag, make some homemade bone broth with leftover turkey or chicken bones! SO GOOD for you and perfect for adding to soups etc this winter!

I’m not going to complain about the cottage cheese because it’s my preference too. I have found a recipe for meatloaf that uses ricotta cheese and love it. Had never bought it before then. 1lb ground beef 8 oz ricotta 1/4 c of French’s Fried Onions, crumbled 1 meatloaf seasoning packet Mix well and shape into 4 individual loaves. Top each loaf with a slice of Swiss cheese. Bake at 375 for 20 minutes, top with a sprinkle of the dried onions and serve with sides of your choice. For a healthy side, mix some drained peas and sliced red bell pepper together with a sprinkle of seasoning salt and put on the baking pan with the meatloaves.
