I’m 30 weeks pregnant. I have made the lasagna twice, I was able to divide it up into 4 8x8 pans and decided to bake one and freeze the rest. My husband loved it! I made the breakfast casserole and froze into individual portions. Now today I’m making the enchiladas . I love your recipes and having freezer full of homemade meals will be a game changer for postpartum.

Hello!! I just wanted to say a big Thank YOU for the chicken enchiladas recipe:) We took our daughter back to college this week and she and I put these together (4 in each tin) for her freezer:) She baked up a tin last night and loved them! While visiting my 91 year old uncle (who lives by himself ) last weekend I decided on the spur of the moment to try to quickly make some freezer meals to leave for him. I have watched several of your videos and made a few things but all the ones I made last weekend were from this video. A pro tip for enchiladas: use corn tortillas and just barely fry them. You still want the tortillas to be flexible for rolling. It prevents soggy tortillas!

You need a extra freezer to hold that much food which I don’t have anymore and my 5 sons are grown with their own families so just my husband and I…and we don’t have the appetite we had when we were younger. We decided not to upgrade to another freezer as it would go bad before we could get through it all. The only time I miss having an extra freezer is thanksgiving and Christmas. But we have managed by doing a potluck for the holidays as the family grew and everyone takes part. That has taken so much stress off me as I’ve done it all for years.

I use a Glad freezer wrap which really works to keep food from tasting like the freezer. It is a blue Saran wrap and worth the investment. Then cover with foil. Can you freeze raw potatoes? I haven’t had good luck with that. Great presentation with lots of practical ideas. Thanks.

Make sure people you give these to know to remove the plastic wrap :) Many years ago when I knew I was going to be having surgery, I cleaned out my freezer, planned and coked enough dinners for 2 weeks, wrapped and labeled them and stacked them in my freezer, so all my husband had to do was pop one in the oven during the 2 weeks of my recovery. Just as a suggestion when you make a meal that uses multiple tortillas, such as the chicken enchiladas meal, lay the number of flour tortillas that you want out on the counter. Portion the cheese on to each then portion the chicken mixture on to each. Roll each and place them into the baking pan. This way you will end up with an even amount of filling in each enchilada and it will go faster. If in the end you have one that has less you can “borrow” from the others.

It all looks good! I don’t buy stew meat, I buy beef roast at $ 2.79 lb. and cut in half one for a small roast and then the other half, into cubes and use that for soups and stews. Much, much cheaper

these are awesome ....allll looked very scrummy ... you really can't beat having things in to go ...huge help n i dont give my man chance to ask for take away as i say no no ill pull xyz out ...i don't like take away its never good n god knows whats in it hee hee so ill add some of these to try ... your shepard's pie is different to ours in uk ...we do it in a rich gravy ...i love how different each country does things ... keeps life interesting aye ...💐

All of these recipes look so delicious!! I think I will do the breakfast casserole first. We get into such a rut with breakfast, so these will be a great change of pace. I do have a couple of breakfast casserole recipes that I usually make for Christmas morning & ocassionally for dinner. I may try to make 2 different dinner casseroles or crockpot recipes to put In the freezer. Whenever a friend or family member has an illness or any other type of life event, I like to take them a meal. If you have a new baby, or illness that’s just one less thing they need to worry about.

As a soon to be single man in his later years, I am always on the lookout for freezer meals. I like cooking, but I don''t love cooking. The enciladas are awesome! The breakfast cassarole is great too! Though I have been having trouble getting hashbrowns from the store. So I subed thick cut french fries laying flat one layer of them on the bottom of the pan with a light covering of cheese (1/2 cup) then add the rest of the fries over that. It is even better! More cheese is always better!
