Im gonna go on a limb here and say making that many mashed potatoes and say it may not be "easier" but finance wise... making a 10 pound bag of potatos at once is MUCH cheaper...if anyone has a kitchenaid mixer i encourage you to make them...use lots of butter and sour cream to keep them fresh and minumize any chance of it turning brown on you...

I made mashed potatoes for the first time a few weeks ago. Ate potato bowls every night that week with different toppings. I just bought a 10 lb bag for 1.89 and plan to make different freezer things.

@jdbfortney it's easier just to make a big batch at once. Alot cheaper If you make potatoes this week. And something else the following week. Eventually you'll be stocked up and don't have to spend a whole day in kitchen. I look at it like this. I can go to work and spend a whole day making money and pay taxes. Then turn around and give it to someone else for a little food. Or I can spend a day in kitchen and make alot of food and not work as much. That's part of the reason I'm gardening and raising animals. Plus the enjoyment

Pam here….which kind of potato do you find cooks best and freezes well as mashed? Instant mashed from Aldi’s is not bad too. It is a balance between time and money. I prefer not to be peeling potatoes and am fine with the skins in my mashed. Yukons and baby reds seem to have best texture for this.

The Dollar Tree has aluminum pans with lids that crimp down that are sort of a coated cardboard. I use those, write directly on the lid and then they are easy to stack. Great recipes as always. I lone making freezer meals and that tomato paste trick is genius!

One thing that helps me with adding broth/stock to freezer meals is to freeze the broth in ice cube trays (because I make my own broth anytime I have meals with bones in them, I like to freeze the broth). One ice cube tray holds about a cup of liquid, so it works out really easily, and you can pop the cubes into your bags already frozen, and it's easy to pour into your crock pots or pans or whatever.

I made all of these and tried them out on my family. They were easy to make and tasted delicious. The seasoning was perfect. The only issue I came across was that with the wild chicken and rice, I kept having too much liquid. However a good fix for that was adding a little instant white rice to it and it was still delicious. Also, we used the fiesta chicken casserole as filling for tacos and burritos. It was awesome. We brought two of the freezer meals with us in a cooler to our beach cottage over vacation and it was so nice to have a great meal only an hour after we checked in with no prep mess. Thank you so much for sharing these. My kids always love your recipes and they are hard to please.

My cheap and easy way to make mashed potatoes (like for shepherds pie) is with frozen hash browns (southern). Dump them in a casserole dish with water, half and half and butter for about 2 hours and they come out soft enough that they mash with a spoon when stirred. So easy and taste like fresh.

We LOVE bob evans mashed potatoes! Julia these are going to absolutely SAVE me! I am having our second baby in the beginning of July and I plan on making a bunch of meals for us at least for the first few weeks. I'm Australian; I've been watching Julia's videos for a while and while I love a lot of the recipe ideas in theory, but so many of them include ingredients that just aren't available where I live, (Ranch seasoning, whatever rotel is, that green enchilada sauce, all the different ways you can buy frozen potatoes or packaged rice in America, and so on), but these ones use simple enough ingredients that I can either get everything here or can easily see what I can substitute.

the fiesta chicken casserole can easily be frozen in a zip lock bag with the air all removed. The shepherd's pie guts can be stored in freezer in its own zip lock with the mashed potatoes and the cheese topping in their own zipper bags all stapled together above the zipper.

I too was hesitant about the glass in the freezer, but if you either thaw the meal first OR if you put it directly from freezer into a cold oven and let the dish be in there while the oven preheat, you shouldn't have an issue with glass shattering.

That looks really good. Do you happen to know what seasonings are in Taco seasoning? I,m probably going to have to buy some. I,m feeling some better. In pain still. I have at least 100. We make a big deal out of it. I have 10 feeders,and they have to be changed half way through the day. I have finally planted some flowers. Not as many as before,but enough. What a great idea to use the prepared mashed potatoes. As much as I like them, I don't want to make them, so using the prepared version makes sense. Also, single people can still use the recipes, either cut the measurements in half or use smaller aluminium trays so you don't have to eat a big tray of food for a week straight. 😄
