My mom (who is definitely NOT Italian) had a large mayo jar in the freezer for the bits of leftovers. When it filled, she dumped it into a pan, covered it with cheese, and baked. She called it "goolash." It was nasty. We are all still traumatized by it 30 years later. lol!

My mother was of Swedish ancestry, but she could have been Italian in the way she used up food. She would gather together leftovers, spices, aromatics, and chop and braise and sizzle and usually add a little cheese at the end. The resulting dish, whatever it was, she dubbed a Kari Sue special (my mom's given names were Karin Suzanne). She'd put it in front of us kids with the comment "Well, enjoy! I don't remember what I put into it so I'm never making it again." As a young widow and single parent of six kids, she needed to make that food stretch as far as it could. Most Kari Sue specials were delicious. And since she passed away in 2020, I'll never have another one.

Amazing how all people regardless of home want to save money..At this time I am on a bus in Italy 11 days of tour of Italy my dream..it took one full year to save to get here but cuting where I could and watching my extras I have managed to have afforded this trip of a life time no debt all prepaid before I left and watch my extras here as well😊

Enjoy Italy!! My husband and I watch our Pennies so we can travel ( which is our passion). While home in the united Staes we rarely eat out so we can save our $$$ to go out of the country.

Spent unplanned money at dollar tree. Went for specific items but found good quality tools in their plus section all were either $3 or $5 . In harbor freight or home depot they would have been between $8-$35 each.

In Kakeibo, the big difference is that you already factored in how much money you want to save 1st & deduct those $$$ before you budget out your money for the month.... Also for each purchase, it's assigned, necessary, unexpected etc. I do like this method, because you're sitting aside your savings first...instead of saving what's left at the end of the month

There's a Japanese term (I don't know how to spell it) which means that you eat until you are 80% full and then stop. It's healthier and a money saver as well, as long as you eat the leftovers another day.

I think sauerkraut originally came from Asia , my mother was German and she made a pickled cucumber and potato soup , it was delicious , I still make it even now for my sister and my grown up kids .
