10 Min. Tomato Soup Recipe with the Vitamix Blender. From fresh ingredients added to the blender and comes out piping hot and ready to eat. This is one of my fav. quick Soup or Bisqe recipes. All natural ingrediants and you can change it around to taste. There is no nailed down rules in making food like this. This is a recipe that you can make in just a few min. and goes great with a grilled cheese sandwich or anything like that. My recipe is below and like I say change it around to suit your own tastes if you like.
Ingredients
* 1/2 of a small onion peeled and trimmed of the ends
* 2 large celery stalk leaves still attached, preferably
* 1 medium to large size carrot or a handful of baby carrots
* 1 garlic clove peeled (optional)
* 3 med. tomatoes (canned tomatoes can be used also)
* Handful of cashews
2-2.5 cups of vegetable broth.
*1 tablespoon of Dan-O's Original seasoning or whatever seasoning you prefer
1/2 cup of cream, almond milk pr coconut milk (optional)
Optional for serving:
* 1/2 cup milk and/or heavy cream to stir in at the end.
* Salt and Pepper to taste. (optional)
Instructions
* Add the onion, celery stalk, carrot, garlic clove, and tomatoes into the blender. Fix the lid carefully in place and blend on HIGH for 6 minutes, or until steam is coming from the top of the blender. If using milk, add it and blend on HIGH for 45 seconds or until hot all the way through.
* If desired, drizzle heavy cream or creme fraiche in the soup as you serve. Garnish with chives or chopped green onions.
