Hey Lisa another great recipe. I exchange the water for a can of full coconut cream which adds creamy deliciousness to the soup. As well instead of doing it in the oven I place it on my smoker and infuse the vegetables with smoke which really adds an earthy tasty to the soup.

Made this last night for dinner....delish!! My new favorite soup recipe. I've made roasted red pepper soup with a similar recipe, but without the balsalmic vinegar or tomato paste. What a difference these make in depth of flavor. Thank you for sharing Lisa.

I love this recipe and will definitely have it for the winter months since I usually do a lot of soups and chilli in the Fall. Do you make soups very often? I made this soup yesterday. It was so easy and delicious. I did add a a sprinkle of Italian seasoning but everything else I did according to the recipe. I just found your channel and love it. I choose a different recipe every dayto use.

So I can report I made this last week and am making a second batch right now. It was delicious 10/10 recipe and one of the best tomato based soups i have tried.. Also for those don't have a broiler you can bake them around 220C then put them under the grill for 5 mins to char them. I am going to try a variation of this next week with more tomatoes over pepper and some coconut cream to make it creamy :)

Generally, red peppers are the sweetest in flavor, so it's best to use this kind. The orange and yellow are fairly sweet, but green is the most bitter. Hope this helps!

No, the friction of the blades on the Vitamix heat it up. It's warm after a minute or two, and hot after blending about 5 minutes. :)

Because I char the peppers and tomatoes, it's best to not have that charcoal-y (ie carcinogenic) skin in the soup. It's really more for the roasted flavor. But if you don't blacken the veggies, then yes, you can absolutely leave the skin on. :)

Interesting - thanks. I will try this version too. Question: why do you need to take the skin off the pepper and tomatoes? These tend to get blitz easily in the vitamix. The soup will get hot the longer it runs in the Vitamix. I mean as if it were on the stove, hot. And you can eat it from the container.
