It annoys me to no end when all the grapes are put out in huge bunches. It means people have to touch them to get a few. Please cut them into groups of 3-4 grapes.

I absolutely agree. Having things like grapes cut I to serving sizes should be automatic. You would need two hands to separate some grapes from the big bunch and there's no where you can set your plate down on that table to do that

Totally agree. I always cut mine up into small bunches. Although you can’t really tell whether they left them here or if they were already cut and then just placed together.

One cheese cube can look the same as another... not to mention pork versus beef. For religious reasons, i do not eat pork, so charcuterie boards without signs i avoid the meats. ​@hollystiener16

Personally I'd add nice little signs saying what each dip and the cheeses are, as well as tongs to pick up the cheese/meats. Also I'd bake that brie and present it in it's dish or put it in one of those little crock pots.

Ok but if I’m paying you $5,000, I want homemade dips and bread fresh from an actual local bakery, not highly processed premade stuff at the grocery store that I can get myself. Girl rolling up with Walmart bread lol but it is very beautiful and I recognize the talent for aesthetically pleasing charcuterie tables.

How different are the breads and dips from selectively shopping Costco to homemade? I understand. But it might cost more than 5K. Many restaurants and bakeries use Costco for homemade ingredients and premade goods.

Something has to give. If you want fresh bread and homemade dips then you're going to get 2 basic cheeses and salami from Walmart. You can't make a charcuterie board with several varieties of fruits, veggies, meats, cheeses, breads, dips, and crackers/nuts etc and everything be premium quality delivered to your home and set up at $50 a person. You either want a bunch of options OR you want a few premium quality ones. You cannot have both.

@@pearpoI def get it I would pay more for those luxury items, but breads at chain stores are filled with preservatives and additives to keep them shelf stable, local bakeries don’t use any of that. Same goes for dips. Most restaurants will go to farmers market for goods not usually Costco, depending on the restaurant.

Also I believe charcuterie should pair with each other it shouldn’t just be a smorgasbord of snacks, the food should pair with each other like wine would with food.

I think it's a great idea to outsource the dips/ bread, especially if you're able to partner with and support a local business that specializes in them. That being said, even though there are indeed good quality brands of dips, etc. sold at grocery stores, full transperancy is a must, and having her clients be aware of the sources of their food is something I'm hopeing gets brought up and ok'd with them.

I really don’t understand what you mean by “total transparency“ in putting together something like this? You buy things at the grocery store, or any store and you aren’t told where the items came from. When you go to a restaurant, do they tell you what fish market or butcher they purchased their food from? of course not. You’re adding a level of complexity here that is unnecessary.

@@leecornelius3458 If you go to a restaurant where the average meal is $50-$100 per plate, you would expect high quality foods grown locally or sourced locally and ethically. Most fancier restaurants that pride themselves will have that information available on their website, but if you're frequenting Denny's or Applebees then it doesn't matter.

over the course of the day/evening the cheese will begin to sweat, the salami becomes lukewarm and looses texture, the bread gets tough because it is pre cut and the crackers go stale. i would suggest a smaller „buffet style“ spread with proper ice cooling for the fresh things and cloches for the bread/crackers. yes, it certainly does not look as good, but the quality of the food and the taste will be better over a longer event. also, if you keep refilling it, if things are not needed or eaten they can be preserved better to be eaten over the next couple days or you can give it away to guests afterwards.

Depends on the event and length. You probably are right! Because of the number of guests cited: 100. But for a short event with 200-300 this is great.

Charcuterie and cheese is best eaten at room temperature, as opposed to things like the fruit. I think the main concern here would be cross-contamination with everybody grabbing stuff. No sneeze guard and very little sanitary measures in place. Could you imagine 2 hours into the party how many people have coughed, picked up stuff, and put it back, and most likely picked food with their fingers? Yikes.

My idea of a good charcuterie board is more specialty food and delicacies. Coppa salami, prosciutto, Serrano ham, French cheeses ,cornichons, imported or small batch crackers. Not stuff that looks like it came from a mainstream grocery store.

I’ve been a Chef my whole life, all those breads were made the day of and are an amazing product. Cheeses and meats are all bought pre made, yes dips could be home made but again I heard a baby in one of the videos and if you are picking the right dips then they are Likely homemade locally. Don’t listen to all these shitty comments, what your doing is great and at least you have the guts to go out on your own and make a living. Keep it up it’s beautiful and amazing

So what The person having the party doesn’t have to think about it, plan what to have on it where it’ll go on there Go wander around the store and look at everything, buy it Load it up, bring it home unload it, wash it, put it away It would take a lot of space And the day of right before it starts lay it all out and arrange it just so This would take a lot of time Idc if it’s store bought . If you can’t tell by the literal HEADS on this person’s walls in the background, I’m sure he’s familiar with MEATS just as your username implies you are. Perhaps you guys can go shooting together some weekend. But I’m sure this is what he requested to keep his guests happy, being a good host, and she’s serving what she was paid to serve, being a good business owner. She’s not going to debate him about the definition of her business name rather than take the damn paycheck and say “thank you, sir, you have excellent taste and a beautiful family; is there anything else I can do for you before I go?” like a normal person.

You actually want to eat cheese and cured meats at more of a room temperature or slightly lower. They taste a lot different than straight out of the frig. And cured Meats will taste different on the way it's cut too.

Clearly there are people in the comment section who don’t own a business or understand the value of someone’s creativity and time. I had someone rail on me for charging them $75 plus my hourly rate for something. They let me know that no one was ever going to pay money like that and that’s not how you do business. Meanwhile I had just finished a project for almost $2,000 for one company. Mind you this was the second project I had done for them and it was for about the same amount, all within a 5 month period of time. It’s called business. It’s called cheap people may not value someone’s craft and time but someone else will. It’s called people pay others because they don’t want to be bothered. Again… it’s called BUSINESS!

That's what I was thinking! It may look very nice but the product is mediocre. Cheap bread from the supermarket, bad croissants, not even the dips are homemade. And the sausage doesn't look of great quality either.

Oh, I love a good charcuterie board that is all across the table like that… For holidays and different events I always get someone who has the talent of putting stuff like that together and making it look beautiful doing it for me! @@Leah-izSicwe make a large charcuterie board every Christmas. Melissa has a point, this is not elegant at all. It is a large buffet of snacks but not a charcuterie board which is usually made of really special items (expensive) you don’t eat every day like specialty smoked or cured meats, pate and other spreads , pickled vegetables and fresh artisan breads not huge chunks of cheddar.

This is not a charcuterie board. Chocolate dipped pretzels, huge chunks of cheddar and cucumbers and croissants? It’s a smorgasbord, you are right. Charcuterie is gourmet cured meats and other artisan accompaniments like cornichon and artisan breads and crackers maybe pate or homemade savory spreads.

Let me ask a question because there seem to be a lot of comments on it. We see a lot of premade from-store things ( dip, bread, meat wrapped in cheese, pretzels) are the clients ok with it, do you tell them, and why? If it is short notice I can understand but you can either do it yourself or go to specialty stores that make it homemade.

Nobody is saying it doesn’t takes work; it surely does, but but if you make a living g of it; at least offer a better selection; I do charcuterie for myself from time to time and this being professional is lacking of good choices

I've been to a ton of parties with boards and I've never once expected the dips, bread, or salami wraps to be homemade. These take so much time to setup for large events, there's value in outsourcing to a company like this. Like, sure you can DIY, but before an event like a wedding who has time to be setting that up for a cocktail hour? It either has to sit out during the whole ceremony or someone in the family has to miss that. Seriously, y'all are hating on her for no reason.

I’m sure there is a lot left over but I’m sure people take it home , guests or the hosts . Usually from experience if they paid for it they will take it and send it home with people . I know I would take it lol!

From experience- if this is the only thing at the party, a lot of it is eaten but if there’s also passed bites or stations then there’s a decent amount of leftovers. At the end, you can ask the host if they’d like to keep the leftovers, hand them out to guests or if the host decides they don’t want the leftovers (which happens often) then the staff whose Working the event can jump in and take what they want.

She cut the orange cheese, made salami roses, cut the grapefruit and passion fruit in half and laid out everything else already prepared from the market. Sounds like a really easy business to get into.

This is so costly if you don’t know where to go and buy in bulk. I used to be so extra and make grazing tables in parties and you can spend anywhere from $400-500 including the flowers. Now I make small boards of fine meats and cheeses - using meats and cheeses that people don’t normally have on a regular like manchego, wine aged cheeses or meats like prosciutto & holiday ham (which surprisingly you can buy in small sizes). Placing the meats first sets up how you’ll put the other items that need to be next to it, and smaller boards instead of a massive 10 foot setup ensure guest will consume the board faster since meats can only stay out for max of 2 hours. Putting everyday cheeses, meat and crackers just makes this a regular Chinese buffet 😂 using fine meats and cheeses in smaller batches make the boards a hit because it gives an elevated experience. Theres a diff between spending hundreds of dollars on basic meats and cheeses to fill up your guests versus fine meats & cheeses that give them an experience, when you see the board just picked on versus a board thats obviously a hit, your budget & out of pocket expenses seem to be worth it.

I think a lot of the opinions pro/con on here are from parts of the country/world where access to...better ingredients...are expected vs. Walmart/costco is top tier....no shade to either side, but attention to the home's interior decorating details might give a hint to location/expectations...no, idk for sure where it is, but im pretty sure of where it isn’t Overall, I think its lovely, you are organized and have an eye for decorating, this is a detail business and that is a skill for sure. As long as the orange cheese isn't getting funky too early, crackers/bread isn't soggy...if you aren't serving to charcuterie specialists, then it just needs to taste good & look appetizing, that's what people will remember, that is your advertising/next gig. Idk if people would be as upset if all of the pre-packaged items came from Trader Joe's vs Walmart...TJs has bomb choc covered pretzely things, imo

It was bought at HEB. It's a massive Texas grocery chain. Most of their stuff is top-notch 👌. I dont know about the crossiants, though I have tried them, and its a hit or miss.

​@@alexianedidrick251 Maybe they requested the croissants? To me a charcuterie or grazing table is interpreted by what one likes. There is no hard and fast rules as what to be included. I always include reduced sodium chicken and / or turkey on a savory board. Not everyone cares for some of the salami, pepperoni, etc.
