Very helpful for us beginners. I've just attempted my 1st full frosting of sides, it was extremely tricky, dont think cream cheese frosting is very cooperative even with cornstarch to stabalise.

Definitely a talent not everyone posesses. I made your butter icing right along with you, followed your tips exactly. The icing pushed out between the tip and the icing bag and then the tip tore the bag. Everytime. Oh well, I enjoyed your videos anyway. I'll stick to sewing.

So sorry to hear that! It sounds like the buttercream was either too stiff or too cold or the hole in your piping bag was too big. If you make it again, if you can't stir it easily you can add a spoonful or two of milk to thin it out and then it will come through the piping tip more easily. Also, if it's very cold in the room, the buttercream can get too stiff to pipe easily. And finally, make sure when you cut the hole at the end of the piping bag that the piping tip sits so that only half of the piping tip is sticking out from the bag, so that it's snug and secure. Having soft (not too stiff) buttercream and a secure piping tip should prevent the piping tip from popping out and also means the buttercream will be easy to pipe with very little pressure from your wrist. Hope that helps!

I picked up the DIY cardboard cakeplate tutorial from a channel that sadly doesn't exist anymore. They gave the tip, to put a square piece of cardboard on the bottom center of the cakeplate, before covering it with gift wrap and self-adhesive plastic foil. The wrapper and foil add colour and protect the board from sticking to the cake, and the small square of cardboard(approx. 1/4 diameter of the board) adds extra stability and also elevates the cake board slightly from the surface, so it's easier to pick up. Just to help round out your amazing work

You can use both gel and liquid to achieve the same results - simply add a lil colouring to your buttercream or icing but blend with a handheld blender.. I got this hack off a cake baker

I use teeth whitening charcoal to make frosting or fondant true black. It works amazingly and takes a small amount. No flavor to it so doesn't change the taste at all.

It's usually great but charcoal can affect the absorption of medications - so just remember to let people know if you use charcoal! I didn't realise for ages and I love the aesthetic of black cakes, which accidentally lowered my thyroxine absorption-oops 😂😂

Buttercream needs to be at room temperature when you spread it onto a cake and smooth it. You can chill the cake before frosting it or after frosting it, but if you chill just the buttercream it will get too firm to spread and smooth.

I love them because you have so much space on the sides for decorations and the sides are so much more visible than the top so everyone will see the decorations. But each to their own! Have you tried the cutting board technique? It makes tall cakes so easy and neat to serve.
