If anyone cares the difference between light and dark brown sugar is the molasses in it. Dark brown has more molasses than light brown sugar. If y’all wanna take your cookies/brownies to the next level. I highly recommend making your own. You can even use dark brown sugar from the store and add more molasses to it and mix.

Rose is one of the most emotive persons in the show. Her face expresses so much and so sincere. There was an episode where she got called about very expensive meat and during the call you really saw in her eyes how much she loved teaching about this meat. Really genuine love. And in this episode: Just look at her face when Emily reads her the title. What a beautiful person. :)

The real star of the show is absolutely Emily's adorable dog kettle. I want to be its friend and give it scritches. Also, I have to say that Lani's take on the normal-price brownies looked excellent (and I will forever be using cocoa instead of flour to nonstick my chocolate cake tins) but I always feel like when the pro chefs add extra ingredients (allergy substitutions notwithstanding, ie. gf flour instead of ap) it's not quite in the spirit of the challenge. Like, it's not a $14 pan of brownies anymore if you've put a $9 vanilla pod into the cream, now is it, professional chefs?

Yeah, it doesn't bother me if they add a cheap ingredient. Like, adding an egg or adding the potatoes in this one because it doesn't change price that much. But a vanilla pod is not a cheap ingredient or even something people would normally have in their house.

I agree but at the same time you can get vanilla beans for less. Kroger often has them on sale for around $3 a bean (two in a spice jar), which I don't think is too outrageous for an already $14 brownie. If you buy them in bulk, you can do even better.

I loved Lani's process throughout this video. It was a lot of technique that I would never have considered and the result is a brownie that looks mega indulgent

The culinary school I went to would never, and mean NEVER, allow a chef to have long nails, hair down, and rings on almost all fingers! And I won't even mention the attitude (my eyes rolled to the back of my head through out the whole video). I love Emily! She is adorable! and her puppy kettle...OMG!! It beats Le Creuset any day! Bring Lorenzo back! And Frank!

What an incredibly charming episode. It’s so nice because trying difficult recipes is one way to just help you really improve. So it’s nice to see a novice actively learn, even if she won’t be making this all the time. On the other side it’s nice to see a seasoned chef use ingredients that are much simpler and helps me to learn to become better and not break the bank. There were ideas I would have never thought of. Funny, charming, adventurous and educational what a well done episode.

I don't think she was condescending. I just don't like how she made her brownies. Maybe I haven't watched this series so much. But she said "The recipe calls for ____. Yea I'm not going to do that." From what I was led to believe you have to use the same ingredients but maybe cook them in a different way. Cause what she made wasn't 14$ brownie. She used her own ingredients.

The caramelized potato skin whipped cream blew my mind! I am absolutely going to try this because I MUST taste it! Loved this video and seeing the contrast in baking methods and ingredients. Lani made the most of the ingredients she was given (with a few cheats) by drawing from her experience. Loved how she explained the way she tweaked Emily’s recipe in layman’s terms. I never would have thought to make a separate meringue when baking a brownie. My next dessert I bake will be a brownie for sure.
