EGG FRIED RICE Ingredients
2 Tbsp cooking oil
2 large eggs
1 cup cooked day-old rice
1/2 cup frozen peas and carrots
1/4 cup diced onion
1 clove of garlic
1 Tbsp Shaoxing cooking wine
2 tsp soy sauce (or to taste)
salt to taste
1 tsp sesame oil
Quick CHICKEN SALAD INGREDIENTS
2 lb rotisserie chicken
2 celery sticks
4 scallions
1 medium carrot
1/4 of a red bell pepper
3/4 cup mayo
salt and pepper to taste
QUICK Red ENCHILADAS Ingredients
(2) 7 oz cans of El Pato hot tomato sauce
10 to 12 corn tortillas (cold)
1/2 of a small onion
8 oz Queso fresco
* In the video, I used Cotija and cheese curds 😬
4 large eggs for topping enchiladas

My stretching a meal years ago was pork roast in a crock pot. I used only the basic spices ( salt, pepper, garlic and 2 onions sliced) After it was ready made tacos, a chili with pinto and black beans added chipotle and jalapeno, did enchiladas and also a pork stew with garbanzo beans. I was a widow with a toddler. Your recipes remind me that times change and your life gets better

We went through hard times two years ago and one meal that I used to make to stretch the budget was a pound a frozen ground pre-seasoned taco ground Turkey meat by Festive at Walmart for $2.54 for a 1lb pkg. cooked added to jasmine rice ( cook 2 1/2 cups in 3 cups of boiling water with 1 & 1/2 tbs tomatoe boullion and 1 tbs minced onion until cooked) then mix in turkey taco meat, spread in baking dish add cheese bake until cheese melts and eat in tortillas. We called them poor man’s tacos

Wow, great cooking skills….i usually have to follow a recipe, I just don’t have the vision but my husband just throws stuff together and often hits a home run. Once I familiarize myself with a recipe I will make substitutions etc but it’s hard for me to think hmmm, I have ground turkey, onions, boullion, cheese, rice and tortillas, I can make a great meal. I’m getting better at doing it but have a long way to go. I am impressed.

I have to say that you are the most fabulous cook. I’m 71 and came from El Paso where the Mexican food is the best. I now live in Colorado and cannot find good Mexican food. I am so glad that I found you and I can now make my own. Simple is the best. Thank you so very much. I will be making those potato flautas this week. You’re the best!!!!!❤

Watching this entire video at 6:30a was torture!! Family is asleep, but I want to go down in the kitchen and start making a mess of all of these! My stomach is growling and my mouth watering, but I thank you!! Normally I would have corn tortillas on hand…wouldn’t you know, not today 😢

I buy a big bag of spinach and add it to enchiladas, eggs etc. so I get my greens in. Pretty inexpensive and you get a lot. Thanks for your videos!

I remember surviving on Caldo de fideo, Aroz con beans and hatch green chili Green or red I loved the Bueno brand. We lived in New Mexico the king of red or Green chilie. I would stretch a pound of ground beef a whole week and we ate good. Lentils with a side of tortas de wuevo floating in the best home made red chilie made from scratch ever. OMGosh. I'm hungry. Loved this video brought back some good memories.

I knew a lovely lady and she would stretch a can of tuna by adding a couple of chopped hard boiled eggs grated carrots and chopped celery, onion and mayo that one little can made a bunch of sandwiches 🙂

In my 20s ground beef was the cheapest protein you could buy per gram of protein. I would buy ground beef on sale and bring it home and cook it plain and separate into 1lbs packages. From there you can make spaghetti or Johnny marzetti or sloppy Joe's or chili etc........ dry pasta and dried beans and dried rice and spices can make your choices various and yummy.

Something I’ve made when I was younger to make ends meet was Panzit. We still make it several times a year. It’s a Filipino dish. Rice noodles, sautéed coleslaw and onion, any chicken you have on hand and the broth from it ( soak the noodles in hot broth after cooking the chicken to soften ) shred chicken and add soy sauce and sesame oil. Put it all together and top with green onions and sesame seeds if you have it. Add a little more soy and sesame oil to taste.

I think I’ve spent the majority of my adult life broke lol. My advice for budget cooking is always buy hams when they are on sale. I use them in. Ya hits and gravy in place of sausage. I make a ham and dumplings (same as chicken and dumplings only using ham) I blend it up in my food processor until it looks like tuna and add mayo for sandwiches. Ham and scallop potatoes. Ham and bean soup with the bone. I also save all chicken bones and use them for broth and bone broth. Your Texas style enchilada sauce, tortillas and cheese has also come in handy more times than I remember.

I used to put any kind of meat in the slow cooker, pour half a jar of green chile salsa on top, and let it cook on low all day. Pork shrinks the lesst. I also did a lot of microwave quesadillas. 😊

Love those enchiladas! I remember being poor and broke... as a single mom I had a $15 a week budget about 25 years ago... it was a lot easier back then than it is now... then I learned how to extreme coupon and it saved our lives!

When you were making the ramen it brought me back to when my kids were younger and I could buy a box of ramen $5.00 or less ,I’d boil water with seasoning packet,add noodles,beaten egg and spinach -my kids loved it and a little healthier,all these recipes are easy and delicious.I made your slow cooker Caldo de res today and it was delicious-back when chicken was cheaper and a bag of potatoes I’d make chicken and potato cheese burritos,individually wrap them,refrigerate but they sure didn’t last long my kids devoured them,thank you for sharing

...I lived alone, as a single woman,in the 80's and early 90s... Back in the 80's, Chix was VERY affordable, so I bought a lot of Chix, and i too " rationed " my food... my Grandmother taught me that. I would make fried chix, with part of the package and just Saute the other part ( I would buy the breasts with Rib meat ,it has a bone ) I would freeze part of the Sautéed ones, and those were used during the following week. I made chix salad,.I also made a great salad with diced chix, strawberries, and mandarin oranges. Things wete much cheaper back then, so I was able to ' splurge " on things like my Salad Dressing, the mandarin oranges, and even freah Croissants! I ate quite well, considering I was a single woman, and made a " Meal Plan " every 2 weeks so that I knew what I was making, buying, and using for other meals,as well. I had a list of " Stapkes " that were things i bought Regularly.. Chix; Organic ground Beef ; Potatoes; onion,Carrots, celery, garlic, Rice, Egg Noodles,Albacore Tuna in Water; Bread, Milk . ( I would use some of the Mandarin Oranges, strawberries, and sliced banana, as a side to a Sunday breakfast of Scrambled Eggs and a Croissant. ) I still planned out my Meals, even after I was married and had children. :) ...I still do. ,as I am Retired. I love your honesty and also how well you explain the Recipes.

Hello, I took flour tortillas, placed spaghetti sauce on it (sometimes 2 if it was pay day) then sliced mushrooms on the sauce and cook it up in the oven. Occasionally I could add mozzarella cheese on top.

I would use 1 lb ground beef seasoned with salt..pepper..onion if I had it.boiled 1 cup Long grain rice…mix those two together..added 1 can Rotel and sprinkled with cheese. It was such a good Mexican type goulash. Ate it with tortillas chips..it made allot.

I found using a peeler to make cucumber thin strips instead of slicing cucumbers is great ! I I taste it so much more instead of cukes falling off the sandwich too👍

MMM...our mom used same idea but with red chili Las Palmas enchilada sauce and we used cheddar cheese. Also pinto beans raw cooked home made 2 hrs then smash into refried beans with a little cheddar and either fried potatoes or a baked potato from micro wave (poor mans bean and potato burritos) with flour or corn tortillas. Walmart Great Value brand flour tortillas $2 per packet. Cheap ideas folks! God Bless

I couldn’t wait, it was so fast and easy to throw together. I Ended up making the white corn tortillas with the onions and queso Fresco and, the salsa Verde. That is going to be my go meal when I don’t feel like cooking just for me. Live up in Juneau Alaska and I’m going to be 75 next November. All my kids are grown so I just cook for my self. Need to find more of your easy meals. Thank you I’m in love with it. Also got all the ingredients to make your tamale pie.question since I live alone do you think I can freeze what I don’t eat for another day?

Low budget family meal we do is a can of corned beef mix with sofrito(onion, cubanelle pepper, garlic, cilantro blended in food processor) small can tomato sauce and if available we add a drained can of corn or fried french fries and we serve with white rice. Or also a can of sardines in tomato sauce add sofrito and sliced onions and serve with white rice.

My husband's been buying me those cans of Salsa Verde from Amazon and I absolutely fell in love with making tacos using the pork from Costco with it on corn tortilla. Mmm... now I'm craving that. We have a new gluten sensitive, possible Celiacs, family member so I've been cooking more potato and rice dishes. Your beans and rice are one of my favorite meals to make and I've been working them into a one pot meal because I'm lazy and tend to mix it all together in my bowl anyway. Thanks Angelica! :)

Even though I was raised in a very strict family ,were caned food was prohibited! And everything had to be done from scratch , I really enjoy ,and like your recipes! honestly I didn’t believe they can taste, good 🫣 But when I prepared the mashed potatoe and chicken …… I thought to my self …,Why bother with a complicated meal 🤷‍♀️ We have mamá recipes 🤗🌺🤤 Ps I hope you can understand my English 🫣

I like making a Chicken Tinga, which is super easy, or a simple blended fresh tomatos, adding 2 garlic cloves and a sprinkle of whole Oregano and pinch of salt. And you have yourself a sauce to add to any meat of your choice. It's up to you to do them in the Enchilada way..or otherwise? I'm Cuban living in Las Vegas and I mostly eat Mexican..cos everything is so easier to make? A blender always helps too🤔

What I meant for more healthier was- better oils better salt and maybe different seasonings but mostly here you do a fine job of healthy eating even though you say these are meals on budget. You are so good here!!

A can of beans (dried is cheaper) sausage. Add onions, greens, and spices if you have them. Cheap easy and can change the flavor with added ingredients. Pour over rice, noodles, potatoes, or bread. I do the same when I make chilli.
