Thanks Aaron. Love the video. I can't help but wonder if you would be better served with long poles on the wagon more like a rickshaw. You could have a cross bar pole that could easily slide out of the way and/or have the poles/arms that could easily raise up where you could easily bow under. very safe, butter is just pure fat so bacteria cant survive in it, there is no water, same as in pure sugar u can keep pure sugar for years, cause without water its impossible for bacteria or fungus to live in it, and cheeze is similar, but also process of making cheeze is often makes friendly bacteria to dominate and similiar to yogurt and kefir etc wont let bad bacteria in

hey Aaron, I recently heard (on TT) that stinging nettles, or rather certain substances in it can be used to make cheese, as in actually help separate the milk sollids from the whey (though in the video that I watched they used cows milk)... I was wondering if you had ever tried this and how that worked for you? if you haven't yet, I am pretty sure you come across plenty of wild growing nettles you could forrage for experimentation, so it might be worth looking in to?

It coagulation was very weak when i experimented making stronger and stronger tea shots and eventually juicing and never getting it to coagulate they sell industrially concentrated nettle rennet but even that is supposed to only produce soft cheeses that cant be aged because they gain bitterness.

Aaron has a unique X breed of sheep that provide a large amount of milk, heavy on the cream. I currently have 60 goats and am jealous of what he is able to do. He can separate the cream and get something for butter or sour cream. Goats have some cream but it is naturally homogenized. I get a bit at the top if it sits for days. My Nigerian dwarf goats had the most cream but the Nigora fleece cross I have now does not, nor does the Togg/ Saanen X I have either. Goats do not graze grass. They want leaves from trees or you need to feed them expensive feed from the store. We also have a herd of Jacob sheep but they do not give milk to me easily. We do milk, cheese, meat and fleece here, but spend a heck of a lot more money than this wonderful man. My point is, know what you want to accomplish and find the right breed or species to do it.
