I used to get a similar sandwich from a local restaurant that closed a few years ago. I miss it so much! The only difference was they used marinated sun-dried tomatoes. I will definitely be making yours! Looks fantastic!!!

The way you went about explaining how each spice affects the chicken... gawd I could taste the final dish just because of that. Pesto subs are on my top 3 chicken sando of all time, others are chicken-parm sandwiches and chicken fajita in garlic bread (this one is the true college student meal 😂). Good show!

Chicken pesto and mozzarella has been my favourite sandwich for years. Will give this recipe a go as your sandwich looks amazing. I think Focaccia is the best bread to have this with though (or ciabattas)

That looks awesome Jack. I have seen cooks place another heavy pan or a weighted baking sheet over the food to act as a press. I haven't used lemon juice in my pesto but will give it a go.

Great recipe. To improve, I’d add arugula and balsamic glaze on top of the fillings. On the bottom would be fig jam and the top would be pesto to make it authentically Italian. Maybe prosciutto instead of chicken to make it fancy.

I make one similar, I brown the chicken, top with pesto, mozzarella and tomato. Finish cooking in the oven then drizzle with a balsamic reduction!

Just a hack, while toasting any bread in the pan, cover it up with the lid. What it will do, the bread will be crusty outside and supermoist inside. Due to this you will get crunch without hurting your mouth.

This looks amazing. I would change a few things for myself - I'd probably brined the chicken breast for an hour first to make it more juicy, I think it would be great for a sandwich like this. Or perhaps marinated it with some acid and umami source for an additional kick of flavor, although maybe it would interfere with the taste of pesto... Still, very nice job
