You guys should do a video with tips and tricks for butchers that are relatively new to the business. Tips on deboning primals with good yields etc etc! Could be an all inclusive video and include twine tying tips and more, that would be amazing

Wow. Just watching y'all divide this carcass into our favorite beef cuts is amazing. The marbling of that animal in just insane. I can't even imagine how rich this stuff is on the palate. Never had Wagyu but after watching this video, I'm ready now!

9:56 FYI sukiyaki cut is Much thinner than that. Should be very thin, but slightly thicker than shabu shabu cut, which cooks immediately when dipped in hot broth. Both of those would be cut on the deli slicer not by hand. Your cut is more like Yakiniku / Korean BBQ style.

Love these videos, thank you!!! Never been a fan of Wagyu but everyone should try it at least once as it is amazing. To me, it's fat marbled with muscle, not muscle marbled with fat..... Just too much but you must try it!!

Thanks for the great video, if we get up to Ohio I’ll sure come to your business. We live in SC. The meat quality is not even close! We lived in Ohio for approximately 40 yrs. So we know the good quality of your products. I remember buying buffalo meat after the Pow-Wow down in Mohican, we bought stew meat and steaks! Yea it was delicious! Thanks again for sharing…

Made the pilgrimage from Pittsburgh to your shop today! Got some bison and elk burgers, a bison chuck roast and some of that wagyu fat to grind with venison... along with 3 flavors of seasonings that I didn't have yet. Nice place and cool to see it in person and not just on video. Maybe I'll get a chance to meet you guys sometime. Keep up the great work!

Loved the long version of this post. Enjoyed this abbreviated version. You fellows a superskilled. Makes me wonder how you would manage a less than prime beef critter. Meaning help us amateur poor fellows learn about cutting up primals and whole quarters we may find at our local shop.

Hubby and I had the distinct privilege of living in Japan for 6 years, and enjoyed wagyu from a variety of regions, including Kobe, Hida etc. It is magnificently flavoured meat. However, now we're back in Oz, I'm leaning very much into grass fed, grass finished regeneratively farmed Jersey beef. The wagyu process involves a lot of grain. ❤

Even at my local butcher shop I can no longer buy 4 lbs of full ribs. I really love to smoke them low and slow (130, 10 hrs). Maybe I saw too many flint stones, or maybe I watched my grandpa break cows before the sheep, with the pigs last. I never broke a pig or cow, but deer, elk, and a bear with 10 gallons of fat. Ty for the videos!

Best looking american wagyu i have seen. I usually choose dry aged prime over american wagyu and Japanese A5 for wagyu, especially if I can find olive fed. But, I may have to get some American from you guys.

Hey there. They are called Bront ribs--short for Brontosaurus. If the ribs are left untrimmed, these ribs are referred to as "Dino ribs." If the plate short ribs are left in-tact, they're called "Brontosaurus ribs."
