“We're spending about $15,000 to $18,000 every single week. It's about 1,000 pounds of fish. Every single time I have visited Este the food and the service has been amazing! Nothing I have had has been bad, and they have found a way to make a Kale Salad that is beautiful and not bitter. The fish is buttery and soft, drinks are top notch and the desserts are legit (spicy margarita). If you want to make life a little easier, make reservations a couple weeks in advance. 10/10

It is a pretty big restaurant. They serve lunch and dinner. Grilled Squid is 28 Bucks. Fish 18-28. A single cocktail 16 Dollars. It isn`t a cheap restaurant by any measure, but the volume they operate at, and the popularity of it... Makes the numbers make sense. Now, were it a 3x Micheline restaurant that does 30 covers per day paying 18 grand for fish for weekend, that would be insane. 200+ on the books for one evening service AND expected 60 walk-ins. That`s just insane numbers.
