This is the technique known to us when I was growing up in Portland. Combination of pimiento leaves and wood in the jerk pan. But everywhere you turn there was a pimiento tree at your disposal. Even now when there is a gathering, pimiento wood is used to make that fire. Keep up the good job chef, lots of patience is required for a great tasting jerk 😊

The breadnut is in the breadfruit family, on the outside it looks like a young Jackfruit, on the inside there are these brown looking pods... My opinon on it's taste after boiling (roasted jackfruit seeds or almond like. I hope you get the chance to experience some(Podrige, flour, punch are some of the things you can make with it, (mosquitoes die or run if you use it as a repellant, good for people with tuberculosis etc... (Growing up in Trelawny, Learnings)
